Bharatji, I'm a Malayali living in Chennai. My wife prepares idlis that are as soft as cotton! But, yeh idli ka readymix powder ek jadoo hai ji! We'ii definitely be preparing it. Laakh laakh shukriya, Bharatji!
Just for everybody's benefit: I tried this last week. The idlis came out excellent (very spongy and moist). I used 1 tsp salt (per indicated in the video). I thought it's on the higher side. For the measurements given in the video probably half a teaspoon to 3/4 a teaspoon should be enough.

You said to take 1 cup do Udad Daal and showed as well BUT while adding on the pan you added much more then what you showed. So what is the actual quantity of Udad daal to be taken. Please do reply
If u are not in jaldi and can wait for 15 mnts then one can use dried yeast one teaspoon, the batter will raise and idle will come out gone and light wt

Next time you can try not to do fine powder of Urad Dal,Poha,Rice.. Just grind it coarsly don't make fine powder... you will get better results... Also,add fenugreek seed powder. One can use combination of citric acid and baking soda as Eno don't give that good taste... Thank you!
