COCONUT CHUTNEY
Preparation time : 10 minutes
Cooking time : 10 minutes
Servings : 2
Ingredients
1 whole Coconut (नारियल)
3-4 fresh Green Chillies (हरी मिर्च)
½ tsp Cumin Seeds (जीरा)
2 tbsp roasted Chana (भुना चना)
6-8 Cashew Nuts (काजू)
1 inch Ginger (अदरक)
Salt to taste (नमक स्वादानुसार)
½ Lemon Juice (नींबू का रस)
For Tempering
2 tbsp Coconut Oil/Refined Oil (नारियल तेल या रिफाइंड तेल)
1 tsp Mustard Seeds (सरसों के बीज)
¼ tsp Fenugreek Seeds (मेथी दाना)
2 tbsp Gota Urad (गोटा उड़द)
1 tbsp Chana Dal (चना दाल)
2 dry Red Chillies (सूखी लाल मिर्च)
1 sprig Curry Leaves (कड़ी पत्ता)
Process
In a grinder jar add coconut, green chillies, cumin seeds, roasted chana, cashew nuts, ginger, salt and grind it into a fine paste.
Meanwhile heat oil in a pan and add mustard seeds, fenugreek seeds, gota urad, chana dal, dry red chillies, curry leaves and fry until nutty brown.
Now remove the coconut paste in a bowl add lemon juice and half of the tempering then mix everything properly.
Put in a serving bowl and garnish with remaining tempering

I'm a South indian and here we use tamarind pulp instead of lemon juice and no cashews coz we don't make it fancy..btw I too admire Ranveer

Your episodes are so informative, thanks Ranveer. As a south Indian may I share a few small hints? 1. No methi in thadka for coconut chutney. Methi in South india is normally used in tadka for curries / kuzhambu and Sambar only. 2. Use freshly broken coconut for chutney for best flavor.

In many parts of Southern India, traditionally the coconut is scrapped using a traditional coconut scrapper. I have prepared chutney both ways, the one you showed by peeling and cutting the inside of the coconut, and scraped coconut. For some reason I feel the scrapped coconut tastes much rich and much better than the cutting the coconut and making chutney. Always loved your recipes sir. Huge fan of yours. Always loved cooking and you have inspired me more to learn about cooking

@@shruthiiyengar6691 yes may be. Probably doing the process chef showed reduces the amount of juiciness inside the coconut. And the coconut separating from its shell itself is a sign of a dry coconut.

Thank you Ranveer for this recipe. Being a Keralite it became a daily routine to make coconut chutney for dosa and idly. We used to make different types of coconut chutneys. This recipe helped me get over my fear to take up coconut recipes. I would always shy away from coconut recipe because I couldn't break a coconut. I think in kerala coconut is called nalikeram or thenga and I being a malayalee I haven't heard the word narikel used anywhere in kerala

Hello Chef, The story behind coconut and banana used as aspusious Prasad is so logically true. I being a South Indian (From Mysore) coconut is a staple ingredient in our cooking. We can't think of any dish without coconut. Chutney is also a staple dish in our home and is accompanied to almost all the dishes we eat. Every house have their own version of chutneys. But I have never tried your version of coconut chutney, will surely try this! We have 2 trees in our back yard!

We Bengali also call it নারিকেল or Narikel. This is one of the main ingredients of Puja and sinni. By the way, the recipe is awesome and your coconut class is also great. Thank you so much Chef ji. 💓

Ranveer you can skip the first step for the coconut. No need to poke the eyes, take a large bowl and start breaking. 3-4 hits, it will break into two halves. You are unnecessarily complicating. May be travel to south India and ask any grandma, she will teach you breaking the coconut easily. You should even try to use young coconut (not too ripe not too young) than too dry ripe ones. too dry seed variety ones are used for oil production and kind of give an off taste compared to a bit younger coconut. Freshness for chutney comes from the selection of right coconut. In telugu, it's also called "kuridi" which is almost ready for long term storage and for oil. Kind of an insult if you serve such chutney to guests.

Chef Ranveer's videos have great entertainment value as well. He brings in his personality and unique style which makes it fun to watch and learn. I have tried many of his recipes and they come out very good. The one where he puts a green chilly while making paneer was mind blowing.I would have never imagined that.

Chef, I beg to differ a little. नीरम् is water. But नारि is fiber. The Monier-Willians Sanskrit-English Dictionary gives the etymology of coconut from its Proto-Dravidian roots: Tamil நாரி (nāri, “fiber”) and Tamil கெளி (keḷi, palm”). Hence, नारिकेल. Fibrous Palm (fruit).

Satnam Kaur,Satsriakal Ranvir Brar,Iam a great admirer of your recipes.narial chitin is my favorite.However,Inever get narwal and make it.I always thought it is such a difficult task to open it,Here in USA,we get narwal scrapes and pieces.in India vendors used to do peeling, breaking etc.Here narwal is available but going through the hassle seems difficult.Now I WILL BUY NARIAL AND WILL ENJOY FRESH WATER TOO.tHANKS FOR LETTING US KNOW THE HISTORICAL BACKGROUND ANDITS AUSPICIOUSNESS.

Ranveer, your recipe had a three-fold message. The tasty recipe, the story of the origin of the coconut and a nice tactic to break a coconut. Today for the first time, I drank the sweet coconut water and broke a coconut effortlessly. Thank you for your interesting technique to break a coconut 😊.

That is indeed “beautiful” … only that most civilized people in most civilized places on our planet will NOT eat and spit the seeds around… no, not even to grow edible forest around them. Most will cut the fruits to extract the seeds!!! bUT clearly much like most mythologies, this one too is written by belly full people who never worked for anything in their life other than stuffing their faces with food and spitting around all day long! 😂😂😂😂😂😂😢😢 😢😢😢😅😅😅😅😅😅 we all know who they are! I like white chutney it is super delicious. When you talk about how hard it is to break & make coconut chutney, It reminds me of When I was on my Industrial Training in Hyderabad, Everyday I used to break 20-40 coconuts 🥥 depends on packs. Accident happens While grating, grater machine we used was very dangerous (Katarnak), it was attached to Big Grinder machine which was so fast & strong 😹 that could easily ruin your fingers I become victim of that MF grinder but somehow I managed it. Hope you know what I'm saying 😇

Coconut is called "NALLIKERAM", pronounced नाळिकेरं, in Kerala (Malayalam language). It's not Narikelam.

Sir chatni कुछ घंटों के बाद khatti kyu ho jati hai मेरा dosa का दुकान है मैं ताजा Nariyal का इस्तेमाल कराता हू चटनी बनाने के लिए और उसमे भुनी हुयी Chana दाल, Hari मिर्च, नमक, dal के पिस्ता हू. ताड़का के लिए. सरसों, उड़द दाल, लाल मिर्च, और कडी पत्ता.. Please help 🙏🙏🙏🙏🙏🙏

Your recipes are awesome n healthy sir ..if you can make an episode of kids birthday party , get-together with quick recipes in veg n non veg, it would be awesome... because we often get tense when such occasions arrives at our house as we have to make many dishes along with sweet dishes in very less time and at same time we need to be present in the occasion. m Most of time we end landing in kitchen during such important event at our house also get tied.... .Even though there are lots of recipes out in youtube channel.. Sir I can trust your recipes n Technics easily hassle-free... Its humble request if you can make party recipes n Technics of preparation...from start to end.. Oh God! My Scientist Chef Ranveer, the coconut chutney is same as ours. Our home needs idlis n dosas, apart from other breakfast 4 times a week. So, since the time I have been born, I am used to it n method is same. I liked ur explanation regarding coconut. Thanks Chef From, Dr. Sony🙌🙏❤️

Thank you chef. 🙏 I didn’t know about why banana and narilyal is so significant in our Puja. Thanks for sharing. However one small request.., it’s not HIndu mythology.., it’s Hindu and Bharat’s history. It’s not a myth . Just because gora ppl couldn’t understand our reach history, they fooled us by calling it mythology and it’s sad that we have been following the same fake narrative of our own history.

Hi Chef, Thanks for your shows. Wow, I ever seen videos like yours. What a training class. I am from USA Wash. DC. Today I learned how to open coconut. But, Chef Can you show how to choose good Coconut. Mostly I buy from Korean stores or Mexican stores, sometime I buy from Patel store. Today I bought two of them, among two one is bad and one is good. You know I would open coconut. I will take hammer and take it outside, bang on it. Then place them on rock break small small piece. Then split shell and coconut by knife. No matter money but time waste, most important thing is, my dinner menu changed because not available coconut. Please show, how to choose good coconut.
