Ingredients:
Chicken: 500gm
Coconut milk: 1 cup
Onions: 2 nos
Ginger: 2"
Garlic : 4 big size cloves
Curd : 3 tbsp
Turmeric powder: 1 tsp
Coriander powder: 1tsp
Cumin powder: 1tsp
Chilli Powder: 1tsp
Chicken masala powder: 1tsp
Ghee : 1tsp
Garam masala powder: 1tsp
Green chilli: 2-3 nos
Salt and sugar as per your taste
White oil for cooking
For dry roast masala:
Coriander seed: 1tsp
Cumin seed: 1tsp
Dry red chilli: 1
Bay leaf: 1
Curry leaves: 10-12 nos
For tempering:
Green cardamom: 4
Cloves: 2
Cinnamon
Bay leaf
Procedure:
Wash chicken properly. Marinate with salt, dry roasted masala and curd for half an hour. Make paste of ginger and garlic. Soak 1 cup grated coconut in 1/2 cup warm milk for 10 minutes. Make fine paste of it and squeeze the coconut milk with the help of fine cloth. Rest aside. Heat oil in kadhai, add the whole garam masala, bay leaf, saute for few seconds, add chopped onions and fry till soften
Add ginger garlic paste, add marinated chicken, saute, add salt, add all the powder spices and saute for 5-7 minutes. Add little amount of water to cook all the ingredients covering lid. Cook for 10 minutes or till the chicken is boiled. Add sugar, ghee and coconut milk. Cook for 5 minutes add garam masala powder before flaming off the gas. Garnish with coriander leaves. The delicious Coconut Chicken is ready to serve. Serve with roti, paratha or pulao.
