ચણા મેથી અને લસણનું અથાણું બનાવવાની રીત ।। Chana methi Lasoon ka Achar
Ingredients :
500 gram raw mangoes
75 gram fenugreek seeds
75 gram chickpea seeds
40 gram dry garlic cloves
400 ml cooking oil
40 gram split mustard seeds
40 gram split fenugreek seeds
2 tbsp chili powder
1 tbsp turmeric powder
2 tbsp salt
1/2 tbsp hing powder
1 stick of cinnamon
5 pieces of long
1/2 tbsp black pepper powder

Very nice Athanu, but so complicated. Why do you have boil the oil? What type of oil did you use?

I have used ground nut oil, oil should be added after boiling. Add in masala when it cools to little warm. Doing that achar will not spoil & last long time

If you like the taste of uncooked oil then ok, but to preserve for long time require to used boiled one

કેરીનું અથાણું બનાવવા માટે કેરીના ટુકડાને હળદર મીઠું ચડાવી 10 થી 12 કલાક ઢાંકીને મૂકી દેવાનું જેથી કેરીની ચીરીઓ પર હળદર મીઠું ચડી જાય 10 થી 12 કલાક પછી ટુકડાઓમાં પાણી થઈ જશે પછી તે ખાટું પાણી

કેરીના ટુકડાને હળદર મીઠા વાળા કરી 8 થી 10 કલાક રાખી દેવાના, 10 કલાક પછી ઉપરથી કેરીના ટુકડા બહાર લઈ તળિયે જે પાણી બચે એ ખાટું પાણી. અથાણામાં જો કેરી નાખો તો આ રીતે કરજો અને પછી કેરીના ટુકડાને કપડાં પર સુકવી દેવાના. ફરી 8 - 10 કલાક પછી કેરીના ટુકડા સાવ સુકાય જાય પછી જ અથાણામાં નાખવા, કેરીમાં જો પાણીનો ભાગ રહી જાય તો અથાણું ખરાબ થઈ જાય. આ માટે આ કેરીના અથાણાનો વીડિયો જોઈ લો એટલે ખ્યાલ આવી જશે ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-F_2G2xGGjd0.html

For making pickle, We first Mix salt and turmeric powder with mango piece. Salt dilutes after some hours soaking sourness from mango that is the khata paani

Please dear, i think you could have made mistake, otherwise it's perfect recipe, from last 10 year every year i prepare it and everybody like it. The taste and colour stay intact for whole year. So please don't spread wrong massage follow the same procedure
