I can provide you with a recipe for making "Dalka Thadka" in the Punjabi dhaba style. Dalka Thadka is a delicious and flavorful Indian lentil dish that's commonly prepared in Punjabi cuisine. Here's how you can make it:
Ingredients:
For the Dalka (Lentil Curry):
1 cup of yellow or red lentils (masoor dal or toor dal)
1 small onion, finely chopped
1 tomato, finely chopped
2-3 cloves of garlic, minced
1-inch piece of ginger, minced
2 green chilies, chopped (adjust to your spice preference)
1/2 teaspoon turmeric powder
1 teaspoon cumin seeds
1/2 teaspoon garam masala
1/2 teaspoon red chili powder (adjust to your spice preference)
Salt to taste
2 tablespoons oil or ghee (clarified butter)
Fresh coriander leaves for garnish
Water for cooking the lentils
For the Tadka (Tempering):
2 tablespoons ghee (clarified butter)
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1/2 teaspoon asafoetida (hing)
4-5 cloves of garlic, thinly sliced
2-3 dried red chilies
A pinch of fenugreek seeds (methi dana)
A few curry leaves
Instructions:
Wash the lentils thoroughly and soak them for about 30 minutes.
In a large pot, add the soaked lentils, chopped onions, tomatoes, green chilies, minced garlic, minced ginger, turmeric powder, red chili powder, and salt. Add about 3 cups of water.
Bring the mixture to a boil, then reduce the heat and let it simmer until the lentils are soft and fully cooked. This will take about 20-25 minutes. You can use a pressure cooker for faster cooking if you prefer.
Once the lentils are cooked, mash them with a ladle or a masher to get a smoother consistency. Add water if needed to adjust the consistency to your liking.
In a separate pan, heat 2 tablespoons of ghee or oil. Add the cumin seeds and let them splutter.
Add the sliced garlic, dried red chilies, mustard seeds, asafoetida, fenugreek seeds, and curry leaves to the pan. Sauté until the garlic turns golden brown.
Pour this tempering (tadka) over the cooked lentils and mix well.
Sprinkle garam masala over the lentils and stir.
Let the Dalka simmer for a few more minutes, allowing the flavors to meld together.
Garnish with fresh coriander leaves.
Your Punjabi Dhaba-style Dalka Thadka is ready to be served. You can enjoy it with rice or Indian bread like naan or roti.
