Kadumapayasam
Ingredients
1) Kerala raw rice / raw rice - 1 cup (200gm)
2) Jaggery - 600 to 650 gm
3) Ghee - ½ to ¾ cup
4) Coconut slices - 1 cup
5) Crushed rock sugar(Kalkandam) - ¾ cup
6) Dried grapes - ½ cup
7) Small ripe banana slices (opt) - ½ cup
Preparation
1) Boil the washed rice with 5 cups water in a broad thick vessel (uruly) till almost well cooked.
2) Add jaggery syrup & reduce by sautéing.
3) When ¾th reduced add half the ghee & continue sautéing.
4) When 85 to 90% done add the coconut, fried in ghee along with the ghee & the other two ingredients stir well & and remove.
