ഓ, വഴുതനങ്ങയല്ലേ..? പറയാൻ വരട്ടെ, ഇങ്ങനെ തയ്യാറാക്കിയാൽ ഇതിൻ്റെ രുചി അടിപൊളി.
Brinjal - 3 nos
Turmeric powder-1/2 teaspoon
Chilly powder 2 teaspoon
Coriander powder- 2 teaspoon
Salt
Coconut oil
Sliced brinjal marinated with the above ingredients and rest for 15-30 minutes.
Garlic- 2 teaspoons
Chopped onions- 2nos
Bisected chilli- 4 nos
Curryleafs
Coconut milk- 1 coconut’s
Tamarind liquid- 3 teaspoon
In a hot pan, oil is heated and mustard is added. Dried red chilly, Garlic, chopped onions, and chili added to pan cook until onions are brownish. Add one more teaspoon chili powder, ½ teaspoon turmeric powder, some curry leaf, and some more salt. Add some tamarind liquid to this and mix well.
Add the diluted coconut milk and marinated brinjal at this stage. Close the lid and allow cooking for 5-7 minutes. Add the thick coconut milk and serve delicious sliced brinjal curry.
