Old Kerala Traditional Desert Pachor | Chakkara Choru | Avoos Kitchen
Ingredients:
Idli Rice: 2 cup
Jaggery: ½ kg
Grated coconut: 11/2 cup
Cashew nut: 2 tbsp
Raisin: 2 tbsp
Coconut sliced: 3 tbsp
Ghee: 3 tbsp
Salt: to taste
Cumin seed, cardamom, dry ginger powder: 1 tbsp
Water: 5 cups + 1 cup
Method:
Wash the rice and soak in water for around 30 minutes, drain the excess water. Pour 5 cups water in a pan, allow the water to boil. add the rice, cover and cook in low flame till the rice turns soft. Add jaggery in another pan, pour 1 cup water and allow to boil. Stir in between. Once the jaggery melted completely, drain through a strainer to remove impurities. Pour the melted jaggery when the rice turns soft. Cover and cook in low flame till the rice absorbs all the jaggery. Add the grated coconut to the rice. Add cumin seed, cardamom and ginger powder, mix well. Pour ghee in another pan, fry cashew nut, raisin and coconut till golden color and add to the rice. Pour the ghee over the rice, mix well. Serve hot.
