Ingredients:
500 grams of chicken, cut into pieces
1/4 teaspoon turmeric powder
1/2 teaspoon fennel seed powder
1/2 teaspoon black pepper powder
1 teaspoon salt
3 medium potatoes (400 grams), mashed
Enough oil for frying
For sauteing:
2 medium onions, diced
2 tablespoons ginger, minced
1 1/2 teaspoons garlic, minced
3 spicy green chilis, minced
2 sprigs curry leaves, minced
1/2 teaspoon turmeric powder
1/2 teaspoon salt, more as needed
1 1/2 teaspoons garam masala powder
1/2 teaspoon black pepper powder
👩🏽🍳 COOKING TIPS FOR FRYING:
1. The oil temperature should be between 350 - 375 degrees F (177-190 degrees C). Often when a cutlet breaks apart it is because the oil is not hot enough.
2. Make sure the cutlet is shaped firmly and coated evenly with the egg whites and breadcrumbs.
3. Fry in small batches for crispy cutlets. Adding too many cutlets into the oil at one time will lower the temperature and cause the cutlets to absorb too much oil and become soggy.
