MANGO FRUIT PRESERVING TECHNIQUES
INGREDIENTS
PART 1
1.Mango fruit skinned 12-15
2.Salt to taste
3.Chilli powder 3-4 tbsp
4.Turmeric powder 1 tsp
5.Ghee 2 tbsp
PREPARATION
1.Pressure cook all the skinned fruits with salt, chilli powder & turmeric
powder adding no water(2 whistles).Let cool.
2.Open add the ghee stirring well to dry.
3.Stock in an air tight container when cool and keep preferably in the freezer.
Can be stocked for 5 - 8 months.

PART 2
1.Mango fruits 20-25
2.Chilli powder 3-4 tbsp
3.Turmeric powder 1 tsp
4.Salt to taste
5.Jaggery ½ kg
PREPARATION
1.Cut the mango fruit with skin and seed and boil with items 2,3, &4 till done
adding a cup of water.
2.Add jaggery syrup to it, boil well ,let cool, and preserve in the fridge.(No freezer)
