As an american chef im so confused. Ive been trained and have practiced custom cultural food.. mostly emphasized on euro-american culture and eastern asian cuisine and "styles" of cooking.. I have NEVER seen anything like this. Does the water just sit and simmer, and be filtered by the sand? Why does it boil harder after your first pour ans con Is there a flame under the sand? If so how wouldnt it evaporate, rather than brew AND filter? How do you filter microscopic sand granules that breakdown during the filtering process?? Ive been an executive chef for 7 years and this blows my mind. This is a technique ive never even heard or seen about. And i like to think i know my coffee. I want this in my face RIGHT NOW.
