I hope you see this. I just want to thank you. My dad taught me to cook and we always made "throw everything into a pot" type of meals together. No recipe, just pure intuition. He passed away in December, and I haven't been able to cook like that since he died. Thanks to your empty fridge video I was inspired to make a meal like i used to make with my dad. We had corn and chicken chowder, zucchini casserole, and strawberry shortcake for dessert. My mom came over and said my dad would have been proud. Thank you for inspiring me. ❤
Every once in awhile I get a family pack of chicken breasts and crock pot them all at once. Its simple seasoning to be flavorful but neutral. Then i shred it and bag it up in meal sized portions and freeze it. In the coming months I have a headstart on tacos, soup, chicken salad, pasta salad, white bean chili, bbq sandwiches. I dont have to know what im doing with it, its ready for a quick meal and often its a no cook meal.
I do the same with a whole chicken. They are so easy to cook in the crockpot or in the oven when it’s not hot and humid. And you can season it the way you like!

Tip: freeze your fresh ginger! Grate it straight from frozen with your micro plane. You can also slice some and freeze it after slicing. I use it all the time and never waste ginger…and it’s always on hand.
rotisserie chicken tacos are the best. warm it up in some taco seasoning and water to cook it down and make it saucy and delicious and that’s a super easy dinner
The chicken/cabbage salad is one I made years ago, but with the ramen in with the coleslaw and dressing, softening it. The chicken was also in there and the sliced almonds. It marinated in the fridge. Delicious. I need to make it again. Basically the same recipe.
You beat me to it. I was going to make a similar comment. I would sprinkle extra sliced almonds and green onions on top for a garnish whenever I took it to a potluck or cookout. It was always a hit.
Making the cucumber pepper salad tonight! I don't have mini peppers but I'm going to slice up my bell peppers into mini cucumbers size and hope for the best 😂😂😂
Hi Mindy. A great video as always, but I do have to pull you up on one little thing. You used cilantro/coriander in your first dish, and said if you don't like it, leave it out. It is not that many people don't like it, including myself, but because of a genetic variation that makes them more sensitive to the aldehyde compounds in the plant. These compounds are also found in soap, which can cause cilantro to taste soapy to people with this variation. This genetic variation is called OR6A2 and is found in a small percentage of the population, I believe as much as 20% of us have this issue. Sorry, but I just wanted to let you and your viewers know it is not us being picky, but we just can't eat the stuff. I hope you and your family have a great week. I am the worst home cook although I have been getting better with crockpot meals, grilled food, sheet pan dinners, and the little reynolds wrap in the oven meals. :)

I recommend a ginger paste that comes in a tube. it’s usually in the produce section at Walmart. I keep it on hand in the freezer and it stays fresh for a long time.
Thank you for the meals, of course. They look tasty, and they're a nice change from some of the more "mainstream" salads and pasta salads out there. What I really want to commend you on, though, is limiting your children's digital/internet consumption (7:00). When I was growing up, my parents made the decision to get rid of TV and video games at our house (for a variety of reasons, some of which you touched on here). While initially resentful, I got over it, and in retrospect, I'm really grateful they did so. Particularly because I have ADHD (we weren't as aware of it back then), and if I'd had those distractions and easy dopamine hits readily accessible, I don't think I would be as functional as I am today. In addition, because the ADHD brain is constantly seeking stimulation, and I couldn't get it through those means, I developed a love of reading, drawing, writing, and crafting instead. I know your decision runs very counterculture, but it will make a difference for the better.

I use rotisserie chicken to make chicken salad and we use for sandwiches and you could also use crackers it's simple. shred the chicken, celery minced and about a cup of mayonnaise, Celery salt ( key ingredient) and salt and pepper.
A cook after my own heart. (I am in TX) tip - I have milk allergies so I use vegan ranch instead or the dairy based sauce or dressing. Also, I am allergic (lots of foods) to tomatoes so I have been know to substitute fresh tomatoes with dried cranberries for sweetness or even chopped grapes. (not the same but yummy)However, I can still tolerate tomatillo salsa, but it's all trial and error and I am not so allergic that I have to carry an epi pen. Just enough to reqet eating them. I finished up my rotisserie chicken yesterday and am wondering what cool foods I can make today! Perfect timing!
If you're not allergic to them, you could also use these in a salad for a slightly acidic taste - mandarin oranges peeled, segmented and cut into pieces. Thinly apple mixed with a little lemon juice. Caramelised onions with a dash of vinegar or wine in the end of the cooking. Vine leaves marinated in olive oil

Okay. I was today years old when I found out you can cook raw corn on the cob in the microwave!!!😳😯 As a lifelong Arkansas that grew up surrounded by corn fields, I feel a bit silly not knowing this. I actually might try out that Buffalo tortellini! Can’t eat tomatoes but I love Buffalo chicken lol. I think your first recipe would also be tasty on a tostada. My oldest just started kindergarten so this video is right on time 😃
Call me crazy, but I truly don't care for the rotisserie chickens cold. Crispy skin, yes. After it cools off, I'm done. I would rather do these recipes with canned chicken breast 😂😂😂. I know, call me a rebel 😊
Give me all the no cook meals! Nothing destroys my appetite faster than the thought of cooking when it's 114f. Great value has tortilla chip rounds that are good and hold up to dips. Also their tomato salsa in the can is very good for $1 but it doesn't show up under salsas or tomatoes. You have to search for it.
Good for you for limiting the kids phone access. The genie’s out of the bottle now, but I think it’s terrible that kids are getting smartphones with full internet access. Flip phones need to make a comeback. Emergency communication is a boon, but there’s too many bad things that can happen if young kids have unlimited access to the internet.
