🛒 Ingredients (4 people):
🔸 1 kg shrimp (2 lb)
🔹 8 artichokes
🔸 1 onion
🔹 2 garlic cloves
🔸 1 tomato
🔹 ½ tsp sweet paprika
🔸 80 ml white wine (⅓ cup)
🔹 15 g cornstarch (2 tbsp)
🔸 30 ml olive oil (2 tbsp)
🔹 1.2 l water (5 cups)
🔸 1 lemon
🔹 ground pepper
🔸 Fresh parsley
🍳 Directions:
1️⃣ Clean the shrimp by removing the head, legs, shell and intestine. In a saucepan, add a little olive oil. When it is hot, sauté the heads and shells of the shrimps, crushing the heads so that they release their juices. Add the water and the diced tomato and two tsp of salt. Cover and cook for 30 minutes from the moment it starts to boil. During cooking, remove the foam generated. Strain and reserve 400 ml (1 ½ cup). You can freeze the rest for another preparation.
2️⃣ Peel the artichokes (I advise you to wear gloves, as they stain your hands a lot): fill a large bowl half full of water, add the lemon juice and the halves. Tear off the outer leaves with your hands, until you see that the most tender and yellowish part reaches the middle. Cut off half of the stalk, peel it and go over the base removing the toughest parts. Cut off the upper part of the leaves (between ⅓ and half). Cut them in half and (with a small knife), remove the hairs. Cut the halves in quarters and put them in the lemon water so that they oxidize as little as possible.
3️⃣ Bring a pot of water to a boil with a little salt. Boil the artichokes for 10 minutes, drain and set aside.
4️⃣ In a low and large frying pan, put the oil and cook the shrimps turn and turn over medium heat. Add a little salt and pepper. Remove and set aside.
5️⃣ Finely chop the onion and garlic. In the shrimp oil, sauté the garlic for a couple of minutes over low heat, add the onion and a pinch of salt. Cook until it is poached. Add the paprika and sauté for half a minute. Pour the white wine and cook for a couple of minutes, until the alcohol evaporates.
6️⃣ Pour the broth. When it boils, add the artichokes and the shrimps. Add the cornstarch diluted in a little water and cook for about 5 minutes, until the broth thickens.
7️⃣ Finish with a little chopped parsley on top.
8️⃣ Serve with good bread, you will need it.
