【妈妈食谱】咖喱鱼
此食谱份量:4 - 5 人
✿材料
• 鱼 750克
• Babas咖喱粉(鱼)2汤匙半
• 咖喱叶 2束
• 大葱 1粒
• 蒜米 5瓣
• 小葱头 3粒
• 辣椒干 12条
• 长豆 5条
• 茄子 1条
• 秋葵 3条
• 番茄 2粒
• 辣椒 1条
• 腐竹 半包
• 椰浆 1碗
• 生抽 适量
• 盐 适量
✿开锅前准备工作
- 将鱼处理干净后抹上少许的盐 备用
- 将Babas 鱼咖喱粉加入少许的水搅拌成泥 备用
- 大葱切块 备用
- 蒜米和小葱头切碎 备用
- 将辣椒干剪半然后浸入热水软化,之后将种子去除后放入搅拌机打成泥 备用
- 按照自己喜欢的方式切长豆,茄子,秋葵,之后加入少许的盐 备用
- 番茄切块,去籽 备用
- 1壶热水 备用
✿步骤
1. 首先,倒入适量油热锅
2. 加入长豆 稍微煎一会
3. 加入秋葵 稍微煎一会 盛出
4. 加入茄子 稍微煎一会 盛出
5. 将蒜米,小葱头爆香
6. 之后,加入咖喱粉泥,辣椒干泥翻炒均匀
7. 加入大葱,咖喱叶翻炒均匀
8. 倒入适量热水,等待煮沸
9. 加入已煎了的长豆,秋葵,茄子
10. 放入鱼之后轻轻的拨动咖喱汁在鱼上(切勿翻炒)
11. 加入辣椒和番茄
12. 倒入椰浆
13. 加入腐竹后轻轻的搅拌均匀
14. 盖上盖子焖煮大约8分钟
15. 开盖之后,加入适量盐和生抽调味即可
完成品

[Mum’s Recipe] Curry Fish
(Suitable for 4 - 5 people)
✿Ingredients
• 750g of fish
• 2 ½ tablespoon of Babas curry powder (fish)
• 2 stem of curry leaves
• 1 onion
• 5 cloves of garlic
• 3 shallots
• 12 dried chilies
• 5 long beans
• 1 eggplant
• 3 okra
• 2 tomatoes
• 1 chili
• ½ pack of bean curd sheet
• 1 bowl of coconut milk
• Suitable amount of light soy sauce
• Suitable amount of salt
✿Pre-preparation
- Clean the fish and rub some salt into the fish
- Mix Babas curry fish powder with water and stir into mud paste
- Cut onion into dice
- Cut garlic and shallot into mince
- Cut the dried chilies into half and soak with hot water until it soften, remove the seed from the dried chilies and blend with blender to create mud paste
- Cut the long beans, eggplant, okra accordingly and add a bit salt into it
- Dice the tomatoes and remove the seed
- 1 Kettle of hot water
✿Steps
1. Firstly, put some oil into the wok and heat it up
2. Add long beans, fry for a while
3. Add okra, fry for a while and take it out
4. Add eggplant, fry for a while and take it out
5. Fry garlic and shallots into slight golden colour to add fragrance
6. Add the curry powder & dried chilies mud paste into the wok, stir fry accordingly
7. Add in onions, curry leaves and stir fry
8. Add suitable amount of hot water, wait for it to get boiled
9. Add the fried long beans, okra and eggplant
10. Put in the fish, gently shake so the curry juice will cover the fish (Do Not Stir Fry!)
11. Add in chili and tomatoes
12. Pour in coconut milk
13. Add in the bean curd and gently stir it
14. Cover the wok and let it cook for about 8 minutes
15. After removing the cover, add suitable amount of salt and light soy sauce for seasoning
Your delicious, mouth-watering curry fish is ready!
