Singapore Fish Head Curry & Kueh Dadar... two Singapore recipes that are some of my favourites. South Indian and Chinese cuisines unite in a delightful tangy and spicy fish head curry that originated in Singapore. It’s layered, rich and spicy, yet is surprisingly straightforward and relatively quick to make. Feel free to use fish meat instead if the head freaks you out - it will still be delicious, just not quite as spot-on as the real deal. For afters, we’re making kueh dadar, rolled-up crepes that get their green colour from pandan leaves, and are filled with a sticky coconut filling that’s sweetened by Malaysian palm sugar.

We also love a good fish head curry too here in Jamaica 🇯🇲. Our recipe is slightly different but still the same deliciousness.

Yum. Lived in Singapore for 2 years .... 97 - 99. Miss miss miss the food.... Not to forget my single and free life!!! Some fusion cuisines just work ... Like peranakan/nonya. Also love the relationship you have with your mom... seems friendly and uncomplicated

This is my favourite!!! Daily food here. I love to eat it with hot basmati rice, french loaf, prata or thosei. Yummmyy. My mum always add 2 tbsp of chilli paste for the colour and flavour. We don't add coconut milk. I prefer non coconut ,original recipe, or just a 1-2 tbsp of yogurt. I am not a fan of coconut milk in dishes haha. In rice like nasi lemak or bubur pengat yes. But if in Laksa, lemak chili api, lodeh, I used evaporated milk. Whereas kueh dadar is my childhood snacks for breakfast and all day snacks haha. My mum used to sell this with other kuehs and nasi lemak in the 70's til early 2000's. Delicious. Ondeh2, lapis, epok2 and mny more

Thank You for sharing this recipe. I’m from Singapore but never try making both myself. It’s so easily available in food court/ hawker centres/restaurants. Kueh Dadar is actually originate from Malaysia

I am from eastern part of India and fish is our staple. So I am used to eating fish head. But this curry is very different from how fish or fish head is made at home. I will definitely try this.

In Malaysia also many people love fish head curry. But my version, maybe most of malaysian dont put lemon grass in curry. Kuih dadar also my favorite "kuih". In malaysia we also called it kuih gulung.. I love how beautiful your kuih is. It looks so nice... Mostly in many stall they just look basic... Yours look so nice!!.

Dadar suspiciously looks like daral that my Tausog coworkers make. It's usually plain but the fancy flavored ones come out in holidays, I've seen ube and pandan versions with the coconut stuffing.

We make fish head curry almost 98%similar in Kerala,the south state of India. This is Goan for sure.. absolutely mouthwatering!

@@burlhorse61 it means "the straits people". Specially, it refers to the early batch of ethnic Chinese people who settled in South East Asia and adopted the local way of life as theirs. The Peranakan spoke the local South East Asian language as mother tongue, in SG and MY, this refers to the Malay language. They also changed their cooking habits by incorporating a lot of local spices in their food. They wore the local clothes, which in MY and SG meant that they wore batik and kebaya. They Peranakans also expressed themselves using popular local poem, ie the pantun. The houses which they lived in also has a lot of local influences. Most Peranakans are found in Penang, Melaka and Singapore but I don't think these are the only cities they have settled in. I have met quite a few of them in Medan in Indonesia but because Indonesia weren't a part of the British empire, (instead it was part of the Dutch empire) the Chinese ppl who adopted the local way of life in Indonesia weren't considered Peranakans.

@@elainev670 Peranakan doesn't only refers to Chinese-Malay fusion from more than 500 years ago, but also Indian-Malay fusion (which was in smaller number). But for this kuih recipe, it's specifically Peranakan Baba Nyonya

You are an amazing cook..I just had fish head curry for dinner a get days ago. Mine is a bit different . I had tamarind juice to it.. there are a few different ways of cooking this fish head curry . Some zhichar stall will steam the fish head before adding to the curry which I find is not good because the flavour of the fish head is not added to the curry..

@@laurence82 fish head curry is common in south India and when they came to Tanah Melayu/Malaya, which Singapore was originally a part of, they bring it with them. the kuih, it's a nyonya dish, which baba nyonya was originated from Melaka. The Chinese assimilated with the Malays and produce wonderful Chinese-Malay fusion food including the kuih. So with shared ancient dish with a history of more than 100 years between Malaysia & Singapore, the original is from Tanah Melayu or Nusantara region.

Many trips to Singapore, I've never seen Kueh Dadar. Fish Head curry, yes, and I've been intimidated. Must try. I do a great Singapore Chili Crab, fish head can't be too different.

Fish head curry is surprisingly easy to make at home! The fish monger basically does all the hard work with the fish head anyway! 😊 Hope you try it out!

Thanks Marian, this looks awesome and really interesting. I know it says firm white fish but I wondered if you think this could work with salmon head? I sometimes end up with them after buying salmon whole and usually just put parts of it in a soup and discard after. Sounds a bit basic, but could you explain which parts of it you eat and how? I find the prospect a bit unappetizing as i'm not used to it, but would like to try.

I've made curry with salmon, you can use the body part. but be careful not to overcook it. it's just that with the types of fish we use for this curry, they have a lot more flesh in the cheeks and the top of the head. not sure if the salmon head have anything to eat off from. with larger fish head, some people eat the eyes too.

Marion's dictionary: a little chilli: A LOT of chilli a little coconut milk: A LOT of it too But you're right. Adding coconut milk to curries makes them extra savoury and tasty. Great video as well

Hahah yea indeed. Honestly I can't think of many curries that coconut cream or milk wouldn't make yummier. When I see a recipe without it, I am suspicious how well rounded it will be. But maybe its my lazy cover up

Marion, is there any taste difference between the darker cylinder palm sugar to the more yellow hockey puck shaped one? Another question is, how do people make those dough (as you may see in street food vendors) that they use to make crepes? So instead of a liquid they pour to make a crepe, it’s a droopy dough.

Here is the real, authentic fish head curry story. There was a little coffee shop along Selegie Road in the 1950s. (my family lived a couple of doors from it) This coffee shop was owned by a Chinese man who rented space to an Indian man who ran a curry stall. After a few years the Indian stall holder left for home. The Chinese coffeeshop owner then decided to make a curry (he had watched the Indian make curry on a daily basis) but he used fishhead instead. That Chinese copy of an Indian curry using fishhead became an instant hit. You had to queue to eat. In the meantime word got to the Indian community that the Chinese were eating fishhead curry. The Chinese fishhead curry lovers had brought their Indian friends to eat there. To cut a long story short, the Indians decided to use fishheads to make their curry too. The original family who "stole" the curry recipe is no longer in business. It was so successful that the coffeeshop owner's children got educated and became lawyers and professionals and there was no one to take over! A Singapore success story tinged with a bit of foodie regret!

The crêpe skin of traditional kueh dadar isn't smooth. It's filled with air holes to make it really light. Perhaps an ingredient is missing😅

Kueh Dadar is not unique to Singapore. It is found in Indonesia and Malaysia and certainly did not originate from Singapore. While popularised as Nyonya Food, they did not create the dish. Fish Head Curry did come from Singapore though.

Marion I really like your recipes but I guess it’s best to leave out the country of origin in your titles especially if it is from Malaysia or Singapore. This two countries have very similar foods and it’s difficult to determine the origin.
