Aritsugu is one of the oldest knife store in Japan.

So, many many years ago I bought a couple of expensive (for me) knives at this very shop. Then I got home to use them, but, had never thought about the fact that I'm left handed. Yeah. Something to consider, My fortunate brother still uses them!

They make left handed knives?? What about either hand knives?

@@JS-jh4cy are you being intentionally dense? Traditional Japanese knives are single beveled like a chisel. They can still be used with the other hand it will just be awkward. They also make double bevel knives

I bought a knife at their store in the Nishiki market in Kyoto. Great knife.

I have used Japanese and German style kitchen knives for many years. Each has their job. My favorite is a Nakari. One thing I learned early on is keep the blade simple. Fancy pattern welded blades look fantastic but they don't make the knife work any better and make for difficult sharpening in some cases.
