中式香茅炒雞。
香茅作為東南亞的食材,通常都會與魚露混搭一起使用,這樣酸酸甜甜的很有東南亞風味也很開胃。但若沒有魚露,香茅也可以作另一種用途,用來做出一個帶有中式/粵式風味的快手小炒,味道也超級下飯。
⭐️難度:3/5
⭐️食材:雞腿一盒(去骨後約1.5磅),香茅約2條,薑適中1塊,乾蔥頭2-4粒隨意。
⭐️調味料:蠔油,生抽,料酒,麻油,糖,鹽,粟粉,胡椒粉,生油。
⭐️簡約食譜:
1. 薑切成薑片,乾蔥頭洗淨切塊備用;
2. 雞腿洗淨去骨瀝乾水,加入調料攪拌均勻,同時徐徐加入一大匙水攪拌均勻後加一大匙油和幾塊薑片拌勻備用;
3. 香茅洗淨去頭尾後切段,用刀背拍打然後切開,分開白色和綠色的部位備用;
4. 下一點點油起鍋,加入雞肉連薑片平鋪以大火把兩面各煎一分鐘再把表面炒至變色備用;
5. 同一鍋下油起鍋,加入香茅白色的部位和薑片小火煸香,轉大火讚入二大匙料酒,下雞肉和乾蔥頭快炒,加入蠔油生抽快炒。蓋過一會焗出香味後開鍋快炒,差不多炒熟加入糖和少許麻油炒香即可!
