@@littleyucookbook我是70年代中的香港移民,移民前在香港學習來美的生活技能,包括中西餐,我曾經在旺角的美而亷餐廳學做廚藝,此餐廳在2012年才關門,然而來美之後,所學的香港廚藝根本上用不上,埠仔流行的是雜碎。所以返回大學讀書,在灣區高科技公司工作了34年後退休,現在懷舊了,尋找當年的港式茶餐廳的煮法。

感謝收看!❤️❤️新鮮豬骨汆燙時切記用冷水下豬骨,凍水加熱過程骨頭就會分解血污異物。若使用滾燙的熱水,高溫會令肉類的蛋白質速凝固收縮,裏面的血水異味雜質就不易分解出來,沒辦法除去肉的腥膻味及浮沫,以至湯頭色水不清澈。希望能夠解答到你的問題喔!

你好! 可以試下焗爐預熱後,放入魚片(重量大概一磅多D,擺正中間),用溫度華氏430F 焗15分鐘左右,視乎焗爐牌子同功能,酌量加減分鐘數。以上係我以前用普通焗爐既做法,希望幫到你!

我係刨皮之後沖下、切塊後凍水沖一下就一直浸凍水,咁樣就可以防止淮山煮熟變色,希望俾到你參考😃😃!

Hey there thanks for watching! You may substitute chicken breast for pork:) also chicken breast contains less fat and is a healthier option!

不一定🙂🙂新鮮當季的白蘿蔔很嫩 沒有根沒有渣,所以只需要削一層即可!

the pre steam pork and steam again the result is steam pork will be too overcook. Normally i steam them in the raw state with egg

Thanks for sharing! Actually I tried this method in the past and unfortunately the steam egg came out too watery ( probably becuz I turned the heat too high) I still prefer pre steaming it for couple mins until like half way cooked and then mixing it with the egg to steam again. By timing it right, the meat is still tender! 😊

你好!😊影片中呢款魚扒有1.1磅左右,我開頭用華氏400度焗4分鐘,之後轉華氏350焗7分鐘, 熟度啱啱好。因每款氣炸焗爐不同,所以記得作適當調整呀,自己試做一兩次熟識自己個焗爐就得啦!另芫茜可換作番茜,都好香咖!希望幫到你

你好! 我本身係住海外咖所以都唔多熟香港D超市! 日式淮山一般係日式超市都可以搵得到!其他煲湯料可以係雜貨鋪或一般超市執齊,希望幫到你!

多謝分享!👍👍 一般出水我都用中火同埋唔會煮太耐,以免煲過湯D肉質會變太乾太「鞋」最後要浪費左,所以就寧願係煲湯時花多D工夫隔走D泡沫🙂🙂,咁樣煲好後,除左飲到靚湯,D西施骨都會變得嫩滑好食!

都唔一定咖!品質靚既勝瓜唔會苦,但因為瓜始終都會有一DD生澀苦味,用影片方法就可改善情況。但品質唔靚既勝瓜苦味係天生既,建議如買到苦絲瓜就唔好食! 另外如果怕運氣唔好,用台灣圓絲瓜(水瓜)代替都可以!

請問你是在北美地區嗎?如果是,這個鑊是幾年前Macy‘s百貨公司促銷買的,牌子是Sedona。後來這個型號沒有了,我換了同牌子的其他款也不錯,如果配搭硅膠鑊鏟一起用,性價比還是高的。你可以搜尋一下

乾淮山可用8-12片隨意,如用鮮淮山,可以酌量調整白蘿蔔和淮山份量。若煮一大煲湯,白蘿蔔和鮮淮山加起來2.5磅剛剛好👍👍
