As a vegetarian for over 30 years, I feel so at home in Taiwan with all the delicious, readily-available vegetarian foods. I feel more accepted in Taiwan as a vegetarian than I do at home in the US, too, though a man selling cong you bing in a night market once snorted and laughed when I asked him if it was vegetarian..
Good job for the seven day challenge. Personally, I have been doing 7 vegetarian meals a week (i.e., half of the main meals) consistently for two years. I found it much easier with mixing cuisines to keep things fresh. Things like a grilled veg sandwich, spinach and ricotta cannelloni, or an avocado/fried tofu bahn mi, or a veg bibimbap with an egg.... etc can easily fill up the slots... not to mention that tofu is just so versatile.
This episode's production is excellent!! I sincerely look forward to seeing you produce a program about eating vegan food in Taiwan! Taiwan is a paradise for vegetarians; no other country makes it easier to transition from a meat-based diet to a vegetarian one. Global warming is intensifying rapidly; eating less meat can also help to slow its progression!

I have been a vegetarian for 35 years. I really enjoy going back to Taiwan and enjoy all the available vegetarian options. Taiwan's vegetarian cuisine is really creative and has good variety
I started adopting a vegetarian diet since early April and the biggest obstacle has been the thought of eating meat every time I go out. One recent temptation has been Sichuan sour & spicy fish. The hard part isn’t to decide whether you should become vegetarian for life. It’s what happens after you say yes - the temptation you face on a daily basis. Taiwan makes it even harder because we all know how much good food we have in here. One trick that works pretty well for me is whenever I feel so tempted to eat meat, I say to myself “I will just go eat at a vegetarian place first and if I still feel hungry after I will just submit to it and eat meat.” A few vegetarian items down the stomach I just don’t feel hungry anymore. The urge is gone. So if you ever decide to become a vegetarian for life, this is one useful trick you definitely need in your pocket. Cheers
Instead of periods of only being vegetarian , you could choose to more often choose vegetarian options when you go out. Therefore plan to eat less meat. Or just add some vegetarian restaurants to places you eat. That way you will likely get some of the benefits, but still can enjoy meat when you want.
That spring roll is more like a Hong Kong and Cantonese-style spring roll. Taiwan's spring roll is rùn bǐng (lūn-piáⁿ)/popiah. You've eaten it before. There are also vegetarian rùn bǐng. I remember when I was a child, my grandparents often brought me to the 超峰寺. The temple has one restaurant, that provides free vegetarian food, now are also the same. But you can donate money by your own will. (The temple is in Kaohsiung, Alian District.) I think it's a matter of habit. When you can often eat vegetarian food since childhood, you get used to it.
Taiwanese vegetarianism is very accessible. Vegetables and fruits are very diverse and easy and cheap to obtain. I have lived in Australia and New Zealand for more than 15 years. There are not many options of fruits and vegetables. The cost of fruits and vegetables is high, and eggs are also expensive too . Well, be honest , it's harder to be a vegetarian in taiwan . Because taiwan is a happy food heaven!
