主要原料:
包豬裡肌(或者豬瘦肉)
佐料和配菜
鹽,蠔油, 花椒粉,雞蛋清,馬鈴薯澱粉,
糖, 鹽, 生抽,香醋, 雞湯.蔥絲,薑絲,胡蘿蔔片,青椒塊兒
以上食材和佐料根據自己口味調整用量
製作過程:
將豬肉切成條兒
加入鹽,花椒粉,蠔油,蛋白兒,澱粉抓勻
準備好配菜蔥絲,薑絲,胡蘿蔔片,青椒塊兒
準備料汁兒:澱粉,糖, 生抽,香醋, 雞湯
鍋中油燒至375度, 初炸至定型後撈出
油溫燒至高溫後復炸至脆
鍋中放少許油,下入蔥薑絲,倒入料汁後,燒至起泡翻滾後倒入炸脆的肉塊,翻炒,盡量讓每塊肉都沾上料汁後出鍋
Ingredients:
Pork Tenderloin(or lean pork)
Seasoning and others
Salt, Oyster oil, Pepper powder, Egg white, Potato starch
Sugar, Soy sauce, Balsamic vinegar, Chicken broth, Green onion, Ginger, Carrot pieces, Bell pepper pieces.
Adjust the amount of the above ingredients and seasonings based on your own taste
Cooking Process:
Slice pork tenderloin into long strips
Mix salt, pepper powder, oyster oil, egg white, and starch with pork well
Prepare veggies, green onion, ginger slices, and carrot, bell pepper pieces
Sauce: starch, sugar, soy sauce, balsamic vinegar, and chicken broth
Heat the oil to 375 degrees, deep fry pork slices until they are solid, then take them out.
Heat the oil again to high temperature and fry the meat slices again until crispy.
Put a little oil in the pot, add onion and ginger slices, pour in the sauce, cook until it bubbles and become thick, then add the crispy meat slices, stir-fry, make every meat piece be wrapped with the sauce, and then take it out.
