上期分享了榴莲海绵蛋糕的做法,这次我要挑战用淡奶油帮它装饰成今年父亲节的榴莲奶油蛋糕。今天要制作的这个蛋糕会比较多准备功夫,所以我就提前一天先绘制好父亲节蛋糕卡和准备一些要用到的材料。
插上亲手绘制的父亲节蛋糕卡,也祝爸爸们父亲节快乐!海绵蛋糕配上淡奶油后,口感会变得很丰富也很顺滑。那味蕾上的榴莲香味有着淡淡的天然pandan芬芳,吃起来香甜可口又不会那么腻。我家人都很喜欢这个味道。这款蛋糕我也试做了好几粒,只能慢慢自己揣摩找出问题和尝试不同的设计。最后才得到自己比较满意的样子。这是我的构图设计,你也可以自由设计你喜欢的构图哦。

榴莲海绵蛋糕
- 4粒 鸡蛋(连壳大约65克)
- 120克 低筋面粉
- 50克 榴莲果肉
- 30克 玉米油/黄油
- 少许盐
- 90克 细砂糖
- 0.5茶匙 柠檬汁/白醋
香兰淡奶油
- 100克 淡奶油
- 20克 糖粉
- 15克 浓缩香兰汁
- 2克 吉利丁粉
榴莲淡奶油
- 250克 淡奶油
- 50克 榴莲果肉
- 40克 糖粉
- 25克 清水
- 4克 吉利丁粉

I shared the recipe for durian sponge cake in the previous post. This time I will challenge to use whipped cream to decorate it as a durian cream cake for Father’s Day this year. This cake will require more preparation work, so I will draw the Father’s Day cake card and prepare some ingredients one day in advance.
I have tried to make several pieces of this cake, and I can only figure out the problem and try different designs. Finally, I got the look I was more satisfied with. This is my favorite design, you can also freely design your favorite composition.
Insert the hand-drawn Father’s Day cake card, and wish all dads a Happy Father’s Day! After the sponge cake is topped with whipped cream, the taste will become rich and smooth. The durian scent on the taste buds has a light natural pandan fragrance, which tastes sweet and delicious and doesn't taste greasy too. My family likes the taste so much.

- 80g Pandan Leaves
- 200g Water
Durian Sponge Cake
- 4 Eggs (about 65g each with shell)
- 120g Cake Flour
- 50g Durian Flesh
- 30g Corn Oil / Butter
- A Pinch of Salt
- 90g Caster Sugar
- 0.5 tsp Lemon Juice / White Vinegar
Pandan Whipped Cream
- 100g Whipping Cream
- 20g Powdered Sugar
- 15g Pandan Extract
- 2g Gelatin Powder
Durian Whipped Cream
- 250g Whipping Cream
- 50g Durian Flesh
- 40g Powdered Sugar
- 25g Water
- 4g Gelatin Powder

請問如果在打發淡奶油時我没有咭利丁粉而不加恐怕打發的淡奶油不够凝固那么我可否把香蘭水减去是否此做法可行請速賜教是盼另外在淡奶油打發時我有填充榴莲又恐怕昼糕基層不够堅周

视频里有解释吉利丁和其他让淡奶油更加稳定的作用,如果没有吉利丁还是可以慢慢加入香兰汁打或者省略掉也是可以的。成品就是比较容易化掉而已,要注意保温和趁冷赶快吃完😂

请问powder sugar跟icing sugar是一样的吗?

基本上是一样的东西。两者只是质感不一样,我的powder sugar是把糖打成粉状比较好溶解。有些人称为糖粉。icing sugar大多数用作甜点表面的装饰,有混合3-10%的玉米淀粉。你可以搜索一下更详细的资料。

你好,不能哦。因为,淡奶油坐冰若先倒入吉利丁就会先凝固结块无法把淡奶油打顺滑咯。

请问如果我只是要斑斓色素,可以不要gelatine粉吗?打发奶油后倒入斑斓汁水会引响奶油状态吗?

你好,班兰汁+gelatine是要让奶油比较稳定。除非你是用化学香精色素的那种就OK,因为只需滴几滴就有味道和颜色了,对奶油的状态就没什么影响。

你好,会有这样的影响 1. 奶油会比较难打到位 2. 也比较容易化掉 你可能需要减少到剩5克的班兰汁就好,不过颜色会比较浅。

差不多一样的,那是油跟水的比例的问题,跟前后加没太大的关系。
