Upon returning, I realized that I've been to the Taichung branch of #BaWeiGingerDuck! My impression is that they thrive in selling ginger duck, especially during the winter; they are closed at other times.
The origin of ginger duck can be traced back to Quanzhou, later transmitted to Xiamen before arriving in Taiwan. However, the original Quanzhou version, known as "Yan Duck," follows a cooking method similar to Taiwan's "Three-Cup Chicken" and isn't called "ginger duck."
The transition from "Yan Duck" to "ginger duck," according to Ms. Chen Jingyi, the author of "#JourneyofGingerDuck," is attributed to Mr. Tian Zhengde, the inventor of ginger duck and founder of "Emperor's Nutritional Ginger Duck." Originally a businessman who frequently indulged in alcohol and developed liver cirrhosis, Tian sought treatment from both Western and Chinese medicine. It was only after encountering a Shanghai traditional Chinese medicine doctor who provided him with a prescription that Tian's condition improved.
This prescription was the key to transforming "Yan Duck" into "ginger duck." No wonder, during the autumn and winter seasons, enjoying ginger duck not only brings a "Taiwanese" hotpot atmosphere but also warms the heart and body.
回來才發現 #覇味薑母鴨 的台中店我去吃過！！而且我的印象是…賣薑母鴫這生意都好好喔！只有做冬天的生意，其它時間都休息。
薑母鴫這個料理它源於泉州，後傳到了廈門再來到台灣…
只不過泉州原版的“薑母鴨”是類似台灣“三杯雞”的烹調做法，而且不叫作“薑母鴨”而是“鹽鴨”。
之所以從“鹽鴨”變成“薑母鴨”據“〈 #薑母鴨的尋味之旅 〉的作者 #陳靜宜 小姐”的考察，是因為薑母鴨的發明人，出生山東的「帝王食補薑母鴨」創辦人田正德先生，原本是生意人經常應酬喝酒喝到肝硬化，為治病求遍了中西醫，一直到遇上一位上海的中醫生給了他一帖藥方，才讓田正德先生的情況有好轉。
而這一帖中藥方也就是從“鹽鴨”變成“薑母鴨”的關鍵。
難怪…
秋冬季在吃薑母鴨時，不但很有“台式”的圍爐氛圍，是不是覺得除了心都暖了、身體也跟著暖了呢？
