The hard part for most home use woks is getting the sides of the pan properly heated. I used a charcoal grill outdoors for the first burn. Wish this had English subtitles. After seasoning, next daily use, can I wash the wok with dish soap? And after clean up the wok, should I put oil again? If we should put oil again, better hang the wok rather than store in the kitchen cabinet , right?
better not to wash the wok with dish soap after seasoning, especially for new wok, because dish soap tend to weaken the seasoning. after clean up the wok, dry the wok by heating on the stove top. you may then apply a very thin layer of oil using kitchen towel when the wok is still hot. let it cool down and you can store it away. you may either store it in the cabinet or hang it up. it won't make a big difference and the oil layer should be very thin and absorbed by the wok. no oils should drip down.
Hi i season my wok as per your video, cooked, wash w soup but after washing i heat up n applied a little bit of oil on the wok. I still see lots of black dirt on the kitchen towel. Is this correct?
you washed it with dish soap? it may weaken the seasoning of the wok. there might be a little bit brownish dirt left on the towel. a lot of black dirt may suggest either flaking of the seasoning or the burning bits left from your cooked food. but don't worry. just thoroughly clean your wok again. heat up over the stove top until dry and hot. put in some oil and salt to form a thick paste, then fold up some paper kitchen towel to scrub all over the work interior, repeat until there are no much black or brownish spots showing up on the kitchen towel. clean with hot water again and dry over heat properly. your wok is good to go.

what kind of electrical stove do you have? i heard that this type of thin carbon steel wok might now work super well on certain type of electrical stove top, as the heating might not be very even leading to a warped bottom. In general, this type of wok is best for gas stove. However, this is just some potential risks to be aware of, and it does works out well for a lot of people. If you would like to season the wok on electrical stove top, I would recommend using medium heat as well, so as to properly heat the whole wok. You may also try to season it in the oven first. Just take of the long wooden handle or wrap it around with some damp cloth followed with aluminum foil. Coat it with a thin layer of vegetable cooking oil and place it in a 425 F oven for about 25 mins upside down. And you may further stir fry some chives to finish the seasoning process as demonstrated in the video. Hope this helps!
The one I seasoned in the video is Sur La Table 14 inch flat bottom carbon steel wok. The elder one is from Wok Shop, the same type of wok. I don't recommend Joyce Chen's carbon steel wok, which is shallower in depth than these 2.
