My mum shows me her quick and simple recipe for cooking the amazing Eggplant with Minced Pork(肉脆茄子).

Minced Pork 100g +/-
Minced Garlic x 3 cloves
Spring Onion & Red Chilies (Garnish)
Abalone Sauce (optional)

With no real formal training in the culinary arts, everything she knows about cooking comes from a life time of pure experience, observation and self improvement.
