上个视频分享了蒸鸡蛋糕的小秘诀,这期我们再补充一些蒸蛋糕的心得,并将份量增加,换个口味蒸香兰海绵蛋糕。这次的鸡蛋糕多了一份香兰叶的味道,吃起来口感还是一样绵密香甜。香兰叶有东南亚香草(Vanilla)之称。在马来西亚,有很多糕点和料理都会用香兰叶来增添香味。

这次我增加份量用6寸的四方固定模,剪一张烤纸铺在模具的底部,这样蛋糕蒸好后就很好脱模啦。不建议使用活动模,因为底部进水的几率蛮高的。份量增加后,蒸的时间也要相对的增加。如果要蒸更大份的蛋糕,时间就要自己增加做调整哦。所以说掌握了上期我们分享的蒸鸡蛋糕小心得,调整份量和换口味都不是问题呢!

蛋黄面糊
- 4粒 蛋黄
- 70克 普通面粉/低筋面粉
- 20克 玉米粉/低筋面粉
- 20克 奶粉
- 50克 香兰汁
- 50克 黄油/玉米油/食用油
- 少许盐
蛋白霜
- 4粒 蛋白
- 40克 细砂糖
- 0.5茶匙 柠檬汁/白醋
香兰汁
- 4片 香兰叶
- 80克 清水

In previous video, we shared the secret of steamed sponge cake. In this video, we will add some more tips, and increase the portion, and change the flavor to a steamed pandan sponge cake. This time the sponge cake has an extra pandan leaf flavor, and the taste and texture are still the same as soft and delicate. Pandan leaves are known as Vanilla in Southeast Asia. In Malaysia, pandan leaves are used to add flavor to many pastries and dishes.

This time we increase the portion and use a 6-inch square fixed cake mold, cut a piece of baking paper and put it on the bottom of the mold, so that the cake will be easily released after steaming. It is not recommended to use movable molds, because the probability of water ingress at the bottom is quite high. After the serving size is increased, the steaming time should be relatively increased. If you want to steam a larger cake, you have to increase the time and make adjustments yourself. So when you have mastered the steamed cake we shared in the previous issue. It is not a problem to adjust the portion and change the flavor!

- 20g Milk Powder
- 50g Pandan Juice
- 50g Butter/Corn Oil/Cooking Oil
- A Pinch Of Salt
Meringue
- 4 Egg Whites
- 40g Caster Sugar
- 0.5 tsp Lemon Juice/White Vinegar
Pandan Juice
-4 pcs Pandan Leaves
-80g Water

奶粉请问是什么牌子? 还是可以换椰浆粉或其它取代呢?

@@aliciafong4609 用什么奶粉都可以,不要放也可以。份量减少了时间可以缩短,蒸30分钟就好了。

还有个特殊的因素供给塌陷失败的人们参考。。。 那就是模具。 这基本就是戚风蛋糕的蒸版 所以我觉得很大可能也是具有戚风蛋糕的特性 那就是蒸这个蛋糕的模具不能用不沾的(涂层,玻璃,放不沾油纸之类的) 因为戚风蛋糕需要爬墙稳住发泡性 那样才不会拿出来后立刻塌陷 蛋糕在蒸的时候 一开始有热蒸汽支撑所以会膨胀开来 放凉后 热气流失 不沾模具会导致蛋糕体抓不住墙而压下来 所以就会造成塌陷 而原主主要是用aluminum 也就是铝质的模具 能很好的让蛋糕稳稳的抓住墙边所以不会塌陷

Hi, can I substitute the milk powder with milk? If can how much should I add. Thank you. I aldready bought the cake mould to try this and try your pandan layer cake. Haven't start the ball rolling yet.😆

Hi, if you want to use milk, then you have to reduce the pandan juice or use pandan extract to mix with milk. Otherwise, the liquid ingredients are too much. You also can omit the milk if you want to do this for pandan layer cake, because there is coconut milk inside the jelly already. Wish you all the best and good luck👍👍

hi 你好请问蒸好后马上脱模是吗? 我的蛋糕底部和旁边会比较湿。。。是不是因为我没有马上脱模?我用玻璃的模具来蒸。。也是有影响吗? 除了底和旁边比较湿,其他都太完美了。。,😊

你好,是的,蒸好后马上脱模。因为蒸的蛋糕湿气会比较重,如果没马上脱模放在凉架上的话,水蒸汽就会累积在蛋糕里。

Can, but please use chiffon cake mold and method to bake this cake. 150°C 50-60min, this just for reference, please adjust according to your oven.

你好,可以的。用活低模摄氏160度烤60分钟,烤好后倒扣晾凉才脱模。可以依你的烤箱调整时间和温度。

你好,可以用任何牌子的奶粉或者不放也可以。奶粉只是增添lemak的味道。牛奶就不行了,因为水分会过多。

你好,可以用烤的,不过糖要增加到80克。不然表面会爆裂得很严重。建议用摄氏150度上下火烤60分钟。

你好, 1. 我不确定您说的班兰浓缩汁是怎样的,有多浓。不管如何,这食谱液体的部分是50克。所以您的班兰浓缩汁+水就必须50克,至于班兰浓缩汁要放多少,您得自己调整了。 2. 这是正方形模6x6x3寸(高) 3. 是的,硬性发泡。 4. 烤的话摄氏150度水浴法60至70分钟。时间只供参考,请自行做调整哦。

可以啊,植物的生命力非常强大。照理来说是要从老叶开始剪的。不过,我之所以剪新叶是因为我这品种的老叶没那么香,老叶我就剪来放在车里,每次上车就能闻到有淡淡的天然香气了。

你好,时间大约要增加15分钟,这只是参考而已,毕竟每个人都锅子和火候不一样。如果你是第一次做蒸蛋糕的话建议你从少份量做起,成功了再制作更大的份量。

你好,是的,热水上锅。一般蒸蛋糕会塌陷或回缩是火候或时间过头了。你可以自己再调整火候和时间,因为家火炉的火力都不太一样。还有,你可以试看蒸笼盖留缝,让它更透气。

哈哈,蒸2次都失败,第一次是锅不够高,盖是透明可以看到里面的,看到蒸了10分钟左右蛋糕高起来了,然后在蒸下去蛋糕应该还在发高,可是盖顶住了,所以蒸出来蛋糕上面面皱,然后矮,第二次蒸,换锅了,可是盖看不到里面,就蒸了出来蛋糕4边旁边都裂开,我的是电子炉来的,用700中火,可能要下到500是吗?然后也是火大才回导致这些问题吗?然后,请问蒸好了等闷5分钟才拿蛋糕出来,那5分钟闷时盖要完全关掉吗?还是一样留5cm的空隙

哈哈哈,你意志力很坚强没有因为失败就气馁。你很棒棒哒! 你第一次蒸的蛋糕首15分钟嘭起来就是温度太高,所以后面就会塌陷变矮。 第二次的情况我蒸蛋糕都没有遇过裂开叻 😅 你可以试试把火下到500,你之前就火候猛了才塌陷。 闷的那5分钟就关火后什么都不要动,乖乖等就可以咯。
