🟢材料:
金蠔 8 只 250 克
紅蔥頭 1粒
蒜頭 1 粒
薑 1 片
芫荽、蔥 適量
蠔油 1 湯匙
老抽、紹酒、雞湯或水 適量
蜂蜜、冰糖、炒芝麻 適量
🟢做法:
1️⃣ 金蠔洗淨。在小鍋中加入適量的水或雞湯,水滾後加入一個蔥結、1 片薑、少許冰糖,放入洗淨的金蠔,加入蠔油、適量酒和少許老抽 (不喜歡深色可不加)。煮沸後轉小火煮 5 分鐘,然後將金蠔夾起,放在通風處吹乾 2-3 小時。
2️⃣ 中火熱鑊加油,加入煮過的金蠔煎至金黃色,翻轉另一面煎至金黃色,取出備用。
3️⃣ 在同一個鍋中,加入切碎的蔥、蒜和薑爆香,加入半湯匙生抽和 1 湯匙紹酒,然後加入適量的蜜糖,翻炒均勻至汁冒泡時,加入金蠔和切碎的芫荽,稍微炒一下,加入炒過的白芝麻即可上碟。
📌備注: 煮蠔水可用於烹飪其他菜餚。
🟢Ingredients:
Semi-dried oysters - 8 pieces , 250g
Shallot - 1 bulb
Garlic - 1 clove
Ginger - 1 slice
Coriander, spring onion - as needed
Oyster sauce - 1 tablespoon
Dark soy sauce, Shaoxing wine, chicken broth or water - as needed
Honey, rock sugar, fried sesame seeds - as needed
🟢Cooking directions:
1️⃣ Wash the semi-dried oysters. In a small pot, add some water or chicken broth and bring to a boil. Add a scallion knot, 1 slice of ginger, and some rock sugar. Place the washed semi-dried oysters in the pot and add oyster sauce, Shaoxing wine, and a little dark soy sauce (optional). Bring to a boil, then reduce heat to low and simmer for 5 minutes. Scoop out the semi-dried oysters and let them dry in a well-ventilated area for 2-3 hours.
2️⃣ Heat up some oil in a pan over medium heat. Fry the semi-dried oysters until golden brown on one side, then flip and fry until golden brown on the other side. Remove and set aside.
3️⃣ In the same pan, sauté the chopped scallions, garlic, and ginger until fragrant. Add half a tablespoon of light soy sauce and 1 tablespoon of Shaoxing wine. Then add honey to taste and stir-fry until the sauce bubbles. Add the semi-dried oysters and chopped coriander, stir briefly, and then add the fried sesame seeds. Serve hot.
📌Note: The water used to cook the oysters can be used for cooking other dishes.
