這個奶油小餐包一出爐馬上被全家一掃而光,早餐根本沒的吃啊。。我覺得我自己一個人就可以吃6個吧! 外層加上鹹奶油真的讓人無法停下來的一個接一個~
溫水100ml
即發酵母3g
高筋麵粉200g
糖20g
奶粉5g
蛋液30g
鹽3g
無鹽奶油25g (室溫)
有鹽奶油25g (+/-)
7寸烤模200度烤15分鐘

[ENGLISH RECIPE]
Ingredients:
Lukewarm water 100ml (35 degree)
Instant Dry Yeast 3g
Bread Flour 200g
Sugar 20g
Milk Powder 5g
Egg 30g
Salt 3g
Unsalted Butter 25g (room temperature)
Salted Butter 25g (+/-)
7" square pan, 200 degree C bake for 15 minutes
1. Dissolve the instant dry yeast in lukewarm water
2. Put the yeast mixture, bread flour, milk powder, sugar, egg in the mixing bowl
3. Turn to low speed to mix together the ingredients
4. Once a dough is formed, turn to high speed and add salt; mix for around 10 minutes
5. Check if the dough is elastic enough and the broken edges are zigzag shape
6. Add unsalted butter and turn to low speed, mix for around 2 minutes
7. Change to high speed and mix for around 5 minutes, until the dough is even more elastic than before, and the broken edges are smooth
8. Shape the dough into a big ball and put in a bowl, cover the bowl with plastic wrap and move to a warm corner for fermentation, needs approximately 1 hour (the dough is done fermenting if you poke a hole into the dough and the hole doesn't shrink back)
9. Get ride of the big air bubbles from the dough, then divide the dough into 16 portions
10. Shape all 16 doughs into a circular ball, then cover with a semi-wet towel and let them rest for 15-20 minutes
11. Roll the doughs flat and reshape them into small balls again, line them in the baking pan (with baking sheets inserted)
12. Put the doughs into the oven for final fermentation (can put 2 cups of hot water in the oven), needs approximately 1 hour
13. Preheat the oven to 200 degree C
13. Brush some egg mixture on the doughs
14. put the baking pan on the bottom rack and bake for ~15 minutes
