遵义羊肉粉是贵州省遵义市的一道特色小吃,用鲜羊肉熬汤,浇米粉,放羊肉片、调料而食。已有300余年制作历史。贵州各地均产羊肉粉,唯有遵义羊肉粉驰名。遵义市的大街小巷,羊肉粉馆栉比鳞次,食客之多,首屈一指。曾获得第二届“中华名小吃”称号。
遵义羊肉粉的名气早在清代中叶就名扬遐迩。凡来遵义品尝过遵义羊肉粉的人,无不交口称赞。遵义人特别爱吃羊肉粉。尤其在冬季,吃一碗滚烫的羊肉粉,浑身暖和。去饭馆进餐的十分踊跃。当地有一种习惯:每逢冬至这天,全城老幼都要吃一碗羊肉粉。说这天吃羊肉粉,整个冬天都不冷。
羊肉粉的主要原料是羊肉和米粉(也称作“米线”)。其做法是:先将羊肉炖好,再将米粉在开水锅里烫三次,除去米粉本身的酸味,盛在瓷碗中。然后在米粉上放一层薄薄的羊肉片,这种羊肉片是煮熟后榨压切成的,浇上鲜红的辣椒油,撒一些花椒粉、蒜苗、香葱、芜荽等。最后加入炖过的羊汤。这样做出来的羊肉粉,热气腾腾,香气扑鼻,十分诱人。
吃羊肉粉最讲究的是吃原汤味。一般说,遵义居民喜欢选择思南县一带产的矮脚山羊,因为这一带山羊肉质细嫩,腥臊味少。当天宰杀剥皮,不用水洗就可放入锅。熬羊肉汤时先将鲜羊肉放入锅中,小火慢炖,羊肉汤清而不浊,鲜而不腥。除去肉和骨之外,再用一两只母鸡,佐以少许冰糖,这样的汤尤为鲜美。

The main ingredients of mutton meal are mutton and rice noodles (also known as "rice noodles"). The method is: first stew the mutton, then scald the rice noodles in a pot of boiling water three times to remove the sour taste of the rice noodles, and put them in a porcelain bowl. Then put a thin layer of mutton slices on the rice noodles. The mutton slices are pressed and cut after being cooked, poured with bright red chili oil, sprinkled with pepper powder, garlic sprouts, chives, coriander and so on. Finally add the stewed lamb soup. The mutton powder produced in this way is steaming and fragrant, very tempting.
The most important thing about eating mutton powder is to eat the original soup flavor. Generally speaking, Zunyi residents like to choose bantam goats produced in Sinan County, because the meat of the goats in this area is tender and less stinky. The skin is slaughtered and peeled on the same day, and it can be put into the pot without washing with water. When boiling the mutton soup, first put the fresh mutton into the pot, simmer slowly over a low heat, the mutton soup is clear but not cloudy, fresh and not fishy. In addition to the meat and bones, one or two hens and a little rock sugar make this soup especially delicious.
