马来西亚式的金瓜糕😋咸香软糯,超好吃,做法简单不翻车‼️🔥
材料:50克小虾米、600克金瓜、1根腊肠、30粒红葱头、8瓣蒜
面糊:300克粘米粉、60克木薯粉、半勺盐、少许胡椒粉、800毫升温水
腌制肉:200克肉末、1勺蚝油、少许胡椒粉、1勺食用油、1勺玉米淀粉
1)把金瓜切条,肉末加入1勺蚝油、少许胡椒粉、1勺食用油、1勺玉米淀粉搅拌均匀备用
2)腊肠去皮切粒,浸泡好的虾米切小、红葱头切片、蒜切末
3)准备一个碗倒入300克粘米粉、60木薯粉,加入半勺盐、少许胡椒粉&800毫升温水搅拌均匀至无颗粒
4)热锅热油小火爆香红葱头至金黄色捞出备用
5)锅留底油,倒入蒜虾米腊肠肉末一起翻炒至焦香,加入南瓜一起翻炒,炒至熟软
6)这时就可以把面糊倒进来,边倒入边搅拌,炒至浓稠状态就可以装模具
7)模具上涂上一层油,倒入炒好的金瓜泥,铺均匀上锅蒸45分钟;后再放凉3-4小时
8)最后撒上炸好的红葱酥,就做好啦❤️

1) cut the pumpkin into stripes,add 1 tablespoon of oyster sauce, a little pepper, 1 tablespoon of cooking oil and 1 tablespoon of cornstarch to the minced meat, stir well and set aside
2) Peel and dice the sausage, cut the soaked shrimp into small pieces, slice the shallots, and mince the garlic
3) Prepare a bowl and pour in 300g rice flour, 60g tapioca flour, add half a spoon of salt, a little pepper & 800ml warm water and mix well until there are no particles
4) Heat oil in a pan and sauté shallots until golden brown and set aside
5) Left the oil in the pan, add in the minced garlic, shrimp, sausage and minced meat and stir-fry until fragrant, add in the pumpkin and stir-fry until cooked and soft
6) At this time, you can pour the batter in, stir while pouring in, stir fry until it thickens,
7) Coat the mold with a layer of oil, pour in the fried pumpkin puree, spread it evenly and steam for 45 minutes; then let it cool for 3-4 hours
8) Lastly, sprinkle with fried shallots and it’s done ❤️

Is your rice flour sticky or not Sir? I want my cake to be creamy, can I steam and mash the squash? Is your water really 800Ml? If I steam the squash, shamm I reduce the 800Ml water to around 700Ml? What is the effect of adding 20% tapioca flour? Other cook add wheat starch. I want my cake to be soft and qq, so souks I add tapioca flour or wheat starch? Thank you very much for sharing sir. If all pumpkin cake, I think yours is the best. By the way I am from sulu, it us very near Malaysia. Thank you so much

The water seems too much,the results is quite dissatisfied.I am not sure whether the brand of the rice flour will effect the texture of the cake.
