(芝)麻醬要好味首要是順滑,其次是不反水,跟以下步驟就可做出極致香滑的麻醬。
🟢麻醬的做法:
1️⃣ 4湯匙芝麻醬加入1湯匙花生醬拌勻。
2️⃣ 加入1茶匙糖、1/2茶匙鹽、1茶匙生抽、分多次加入1茶匙涼開水攪拌至順滑。
3️⃣ 最後加入適量芝麻油拌勻。
🟢麻醬順滑的3個竅門:
❶用餐時才做, 不要預先做定,預先做定會反水。
❷芝麻醬和花生醬的比例是4:1,四份芝麻醬一份花生醬。
❸分多次加入1茶匙涼開水攪拌至順滑為止。
To make delicious sesame sauce, the most important thing is to have a smooth texture, followed by no separation of oil and water. By following these steps, you can make the ultimate fragrant and smooth sesame sauce.
🟢Recipe for Sesame Sauce:
1️⃣ Mix 4 tablespoons of sesame paste with 1 tablespoon of peanut butter.
2️⃣ Add 1 teaspoon of sugar, 1/2 teaspoon of salt, 1 teaspoon of soy sauce, and slowly add 1 teaspoon of cold boiled water while stirring until the mixture is smooth.
3️⃣ Finally, add an appropriate amount of sesame oil and mix well.
🟢3 Tips for a Smooth Sesame Sauce:
❶ Make it right before serving, do not make it in advance as it will separate.
❷ The ratio of sesame paste to peanut butter is 4:1, meaning four parts sesame paste to one part peanut butter.
❸ Add 1 teaspoon of cold boiled water in small portions while stirring until the sauce becomes smooth.

Chinese sesame paste is not cheap here. I use tahini as a substitute and it is not a bad substitute. The tahini's sesame has not been roasted so it is not as fragrant but it is still good.
