달콤하고 향긋한 꿀이 주르륵 흐르는 노오븐 허니 마스카포네 치즈케이크를 만들었어요~
고소한 마스카포네 치즈와 달콤한 꿀이 들어있어 정말 향긋하고 맛있더라구요~*^^*
윗면에는 뽁뽁이를 이용해 벌집 무늬를 만들고 꿀을 흘려주니 먹음직스럽고 반짝반짝 해서 시선이 가는 것 같아요~
냉동실에서 얼린 뒤 뽁뽁이를 조심히 살살 떼어내면 잘 분리 되더라구요~
생각보다 꿀과 치즈케이크의 조합이 좋아서 맛있게 잘 먹었답니다~^^

▶틀 사이즈 Mold size : 15cm x 7cm
▶재료
따뜻한 물 60g
꿀 20g
판젤라틴 2g
부순 다이제 쿠키 70g
녹인 무염버터 35g
달걀노른자 1개
물 25g
설탕 35g
꿀 20g
마스카포네치즈 150g
판젤라틴 6g
레몬즙 5g
60% 정도 휘핑한 생크림 300g
▶레시피
1. 따뜻한 물, 꿀을 섞고 찬물에 10분 정도 불린 판젤라틴의 물기를 꼭 짜 넣고 섞은 뒤 반구 몰드에 붓고 냉동실에서 2시간 정도 굳힌다.
2. 부순 다이제 쿠키와 녹인 무염버터를 섞고 틀에 넣어 꾹꾹 눌러 깐 뒤 냉장실에 넣어둔다.
3. 뜨거운 물이 담긴 냄비에 달걀 노른자가 담긴 볼을 올리고 물, 설탕, 꿀을 넣고 설탕이 녹을 때까지 섞은 뒤 마스카포네 치즈를 넣고 섞는다.
4. 냄비에서 내리고 찬물에 10분 정도 불린 판젤라틴의 물기를 꼭 짜 넣고 섞은 뒤 레몬즙을 넣고 섞는다.
5. 60% 정도 휘핑한 생크림에 (4)를 넣고 섞은 뒤 틀에 조금 넣고 평평히 한다.
6. 반구 몰드에 굳힌 꿀 젤리를 틀에 넣고 남은 무스를 조금 남기고 모두 넣은 뒤 평평히 한 뒤 냉장실에서 30분 정도 굳힌다.
7. 남은 치즈케이크 반죽에 노랑 식용색소를 조금 넣고 섞는다.
8. 틀에 남은 반죽을 붓고 15cm로 자른 뽁뽁이를 올려 눌러 모양을 낸 뒤 냉동실에서 3시간 정도 굳힌다.
9. 뽁뽁이를 떼어내고 스팀타올로 틀 겉면을 감싸 살짝 녹인 뒤 틀을 제거하고 위에 꿀을 뿌려 마무리한다.
▶Ingredients
60g Warm water
20g Honey
2g Gelatin sheet
70g Crushed digestive cookie
35g Melted unsalted butter
1 Egg yolk
25g Water
35g Sugar
20g Honey
150g Mascarpone cheese
6g Gelatin sheet
5g Lemon juice
300g Whipped cream (whipped up 60%)

you can do that just at home, the plastic used is not certified for being used in the kitchen directly on food. Good idea but not so legal :D

Bubble wrap is not certified by the FDA as safe to be used on food. There are silicone molds you buy instead that have honey comb patterns. It's safe and reusable!

@@artemischen4086 there are a lot of chemicals used to make bubble wrap. Lots of industrial chemicals it probably comes into contact with like BPA, different pfas chemicals, pcbs...the list goes on and on...

What a beautiful cake! Using bubblewrap to get the honeycomb appearance is so smart! I was thinking, "what home cook would go out of their way to buy a honeycomb mold to make a single cake?" But when I saw you get out the bubblewrap, I was very impressed; I can actually easily make this cake. Thank you!

you can also use those silicon mats for hot pans that are shaped like honeycomb. it's what they used making the honey cake some time ago :)

If you noticed her hands and speed...she does things about 50% slower than what people normally do...so the sounds can be exaggerated for the ASMR fans. 😂😂😂 So if you do things as slow as she does in the videos, your cakes will turn out just as nice. Patience is really key!

I made this today! It's so sweet and good 😍 This is such a simple recipe that any dummy can follow it and make a delicious dessert. I have no prior baking experience and it still turned out awesome ❤❤❤

A few questions- at the point where she mixes the egg yolk and other ingredients- that is a bain-marie (double boiler) right? the bowl is suspended over hot water-to aid the mixing of ingredient over a slow heat-without cooking them, correct? Secondly, the 60% whipped cream; is it whipped till it doubles in size- or that's the fat content? Ive only seen 35% fat content cream out there... Lastly that final garnish seems to be honey, is that correct?

@@007solstice yeah it's a double boiler. Make sure you keep it moving so that the egg does not cook in lumps, it can be annoying as heck but don't walk away from it. Also yeah there's no need to whip it up to 100% by which it would either be like weird butter or just way too stiff. Just a little so that it's light and airy enough to make your cheesecake fluffy. Don't take too long because your gelatin won't dissolve in your mixture tho haha make sure everything's still warm. Yeah at the end, it's honey but I suppose you could really use any syrupy topping. Your choice I guess. Hope this helped

이 영상 자체로도 귀도 호강하고 눈도 즐겁지만 제일 즐거워지는 장면은 뽁뽁이를 떼어내는 장면이었어요..☺ 뽁뽁이 모양 그대로 케이크에 남아있는데다가 꿀로 가득 채우니까 진짜 벌집같다고 느껴질 정도로 맛있어보였어요..ㅠㅠㅠㅠ 오늘도 영상 알림 오자마자 시청하구 가요!!😂

Not only is this an AMAZING cake, but thank you SO much for including the sounds of you making the cake. I'm over half Deaf, and I don't think I have ever heard so clearly the sounds of baking. 항상 과거 영상만 보다가 드디어 오늘 영상, 그것도 33분 전 영상을 보게 됐네요😊 오늘 케이크는 오븐이 없어도 되는데다 재료도 꽤 간단해 보여서 처음으로 만들어 보고 싶다는 생각이 들었어요ㅎㅎ (만들 도구나 재료가 하나도 없기에..ㅠㅠ) 뽁뽁이로 벌집 모양 내신 것도 참 기발해 보였고 꿀도 아낌없이 뿌리는 모습에 달달달♥ 쿠킹트리님 베이킹에서 가장 마음에드는 걸 꼽으라면 조용조용 진행되는 것과 식용색소를 많이 사용하지 않는다는 점인데요 제가 본 영상마다 색소를 필요한 만큼만 조금 넣으시는 걸 보고 참 좋았어요. 다른 영상 보면 색소 넣고 고속 휘핑기로 휙 돌리면 색이 확! 나서 보기에는 좋았지만 쿠킹트리님처럼 적당량 사용하는 게 건강한 베이킹일 것 같아요♥(물론 식용색소이지만요!) 오늘도 맛있는 영상 즐겁게 봤어요~ 겨울이니 겨울간식(붕어빵, 군고구마 등) 데코 케이크는 어떠신지 의견 내봅니다~♥ 어제 오늘 붕어빵을 몇 개나 사먹었는지... 가슴에 만원은 품고 있어야지요...ㅎㅎㅎ 앞으로도 맛있는 베이킹 기대할게요~💞💕

뽁뽁이로 모양을 낼 생각은 못해밨는데 넘 신기했어요~ 마스카포네 치즈와 꿀의 조합이 참 좋네요~ 뭔가 겨울과 느낌이 잘 어울려요

생각보다 꿀을 넣은 치즈케이크 맛이 너무 맛있어서 깜짝 놀랐답니다~~^^ 뽁뽁이를 사용하니 쉽고 재미있게 모양을 낼 수 있어 좋은 것 같아요~~

Jessica Crutchfield this bothers me too lol. But for me it's mostly because I can't comprehend how she spends (I assume) all this time making these gorgeous desserts and then she "ruins" individual ones by forking into multiple individual desserts half way or in the main part on a bigger dessert such as this cheesecake. You can't serve it or sell it after the whole thing has been dug into 😭

Honey has a lot of sugar. This has a ton of honey so should be very sweet.

I used this recipe and just found out that the taste is not that bad but not good The texture of cheesecake is too soft the taste is not sweet enough The texture of honey gelatin is not chewy enough So lots of problems to solve haha
