Dear Cooking Tree, this is my favorite cheesecake! I have made it with mango and also with apricot. It's really delicious. I have a question considering way of storage. I would like to make it earlier and frozen it. I'm afraid it could change the structure from creamy to granulated and release the water after defrosting. Do you have any experience with defrosting of this cheesecake or any general advice? Thank you for posting these beautiful pieces of art, I really enjoy it.
