폭신하고 촉촉한 코튼 스펀지 케이크를 만들었어요~
일반 제누와즈보다 훨씬 부드럽고 조밀한 느낌이라 그냥 먹어도 촉촉하게 먹을 수 있는 케이크랍니다~
초콜릿을 녹여 넣어 초콜릿 맛도 은은하게 나고 쫀쫀한 느낌이 나는 것 같아요~
이 케이크는 머랭의 상태가 성공을 좌우하는 아주 중요한 요소라서 머랭을 부드럽게 뿔이 서는 정도로 오버 휘핑 되지 않도록 하는게 중요하답니다~
단면의 기공이 촘촘해서 자르면 깔끔한 느낌의 단면이 나와 정갈한 느낌이 드는 것 같아요~
따뜻할때 바로 먹어도 좋지만 냉장실에서 차갑게 숙성 시켜 먹으면 더 진한 초콜릿 맛과 달콤함을 느낄 수 있답니다~

▶틀 사이즈 Mold size : 17cm
▶재료
다크초콜릿 50g
무염버터 80g
우유 100g
박력분 90g
코코아파우더 10g
달걀노른자 6개
바닐라익스트랙 5g
소금 1g
달걀흰자 6개
설탕 110g
▶레시피
1. 다크초콜릿, 무염버터, 우유가 담긴 볼을 끓인 물이 담긴 냄비 위에 올려 중탕으로 녹이고 냄비에서 볼을 내려 박력분, 코코아파우더를 체 쳐 넣고 섞는다.
2. 달걀노른자, 바닐라익스트랙, 소금을 넣고 섞은 뒤 체에 걸러 랩을 덮은 뒤 50도 정도의 뜨거운 물 위에 올려 둔다.
3. 달걀흰자를 휘핑하다가 큰 거품이 올라오면 설탕을 나눠 넣고 휘핑해 아주 부드러운 뿔이 서는 머랭을 만든다.
4. 노른자 반죽을 물에서 내려 한번 섞고 머랭을 조금 넣고 섞은 뒤 머랭에 섞은 반죽을 넣고 섞는다.
5. 틀에 붓고 기포정리를 한 뒤 70도 정도의 뜨거운 물이 담긴 팬 위에 올려 150도 예열한 오븐에서 35분을 굽고 온도를 120도로 내려 40분 정도 더 굽는다.

80g Unsalted butter
100g Milk
90g Cake flour
10g Cocoa powder
6 Egg yolks
5g Vanilla extract
1g Salt
6 Egg whites
110g Sugar

I just made this cake today and it is literally the fluffiest cake I’ve ever eaten. I used 7 eggs instead of 6 and adjusted the other ingredients. I also used 78% dark chocolate and it is not bitter at all. It has the right amount of sweetness to it. Highly recommend to try this recipe out!

I love making Castella cake because such simple and few ingredients yields amazing results, its so amazing that just whipping egg white creates that pillow like texture, one of my favourite cakes. I haven't made chocolate flavour before though so will definitely have to try that soon!

I was hesitant to try because some of their comments stated that they failed, but because I personally thought the video was very interesting and the results looked delicious, I finally decided to try. Thanks God the results matched my expectations, and I am very proud to present it as my father-in-law's birthday cake, and he really likes it. Thank you so much. This is beautiful recipe.

Hi boddy! I have been watching many channel similar to this, but, this is the best one. That technique you use to smooth the mix of yolk, flour, butter and milk on the castella one, is very useful man. The final result is amazing. 방금 만들어봤는데 기본 카스테라보다 초코맛이 훨씬 맛있어요. 기본은 계란 맛이 되게 진해서 맛은 있는데 뭔가 좀 그랬거든요. 이건 달지도 않고 초코맛도 나서 좋아요. 저는 버터 대신에 식용유 썼는데 식용유로 해도 엄청 촉촉하고 맛있어요.

Can you tell me what cake flour is? Is it a special type of flour or is i flour that has something added?

Lotte Nielsen the cake grew a lot without baking powder in the recipe, so I would say there was some kind of ferment added in the flour. Only eggwhites aren’t enough to make a cake fluffy like that.

@@YasminQuasne they are enought... cake flour is simply flour with lower protein levels. you canadd a bitof cornstarch to all purpose flour and have cake flour

I made this chocolate cake, and the souffle cheesecake and they turned out amazing. I love that they're not overly sweet. This chocolate cake literally melts in your mouth.

Hi! This sponge cake looks lovely! I'm looking forward to trying it. I just have a question out of curiosity, what's the reason for baking the cake with a mold with water? :) Thank you for sharing!

i presume it's so that there's an even heat around the cake, and the steam also helps stop the cake from browning too much on top (as well as having the oven at a lower temp), unlike, say, a batch of brownies that become slightly hard on the top from the harsh heat from the oven, hope i could help :))

I tried to make this type of cake today for the first time. Although I followed the instructions and used an oven thermometer already, the cake was still not done after the stated time. I needed to keep the cake in the oven for another 30 minutes at 120C to fully cook it. Nevertheless, it was delicious! The top was cracked and my cake was not as tall though. I will try again next time. Thank you, Cooking Tree!

카스테라 나무틀밖에 없어서 덜익을까봐 130도로 중간에 좀 돌리다 더 낮췄어요. 너무 부드럽고 맛있어요ㅠㅠㅠ 굽자마자 잘랐는데 다없어지는 매직! 완전 부드러워서 애기도 너무잘먹어요

레시피 보고 두번정도 같은 정량으로 해보지만 초콜릿 녹이는 부분에서 액체의 정도가 달라서 가루류와 모두 섞고서 두번 째 체에는 절대 거를 수없게 진득 진득한 반죽이 되더라구요,, 미국에서 파는 제품으로 사용하는데 왜 다른지 잘 모르겠어요 . 그래도 맛있고 촉촉한 스펀지케이크가 돼서 만족입니다..

Tried this recipe and it turned out great..just it didnt come out as high as yours and shrink a bit but the taste is superb. I also glazed it with chocolate ganache and tasted wonderful. Thanks for sharing
