Summer is approaching. There are no seasonal fruits these days, but there are still fruits that can only be eaten at this time. Today, I made a 'Gwa-pyeon' with apricots. In Korea, there is a fruit jelly with a form similar to jelly, which is called ‘Gwa-pyeon(果片)’. Gwa-pyeon is a traditional Korean sweet that is made by boiling starch and simmering starchy fruits such as cherry, apricot, quince, and omija.
[Ingredient]
300g Apricot
300g Water
A pinch of salt
100g Sugar
50g Mung beans starch
1t Honey

[Process]
Mix 50 g of mung bean starch with 100 g of water.
(Mixed at the same rate is too thick, so it will clump when added to juice.)
Filter through a sieve to remove all the grains.
Cut 300 g (approximately 5) of apricots and add 300 g of water to the blender.
Filter through a fine sieve.
Add apricot juice, sugar, and salt to a boil.
(When you remove the foam, it becomes a smooth surface.)
Turn off the fire, add mung bean starch several times and mix.
(If you put it all together, it may be lumped.)
Boil until the apricot juice becomes transparent and air bubbles rise on low heat.
Finally, add honey and mix.
Soak water in a mold or square frame and pour it, then harden it for 4-5 hours.
