I prepared peach tarts today
I decorated it with softer peaches since I like them more, but it's okay to put harder peaches!
It's very delicious since the peaches were very sweet!
You can change it to your favorite fruits, but you should try the fruits that are in season! The cream is not that sweet, if you want to make the cream sweeter, add sugar twice as much.
▶ingredient
+ pate sucree
120g unsalted butter, 60g powdered sugar, 2개 egg yolks, 3ml vanilla extract, 240g cake flour
+ almond cream
100g unsalted butter, 100g sugar, 100g eggs, 4ml vanilla extract, 100g almond powder
+ diplomat cream
200g milk, 1/2 vanilla bean, 3 egg yolks, 30g sugar, 20g cornstarch, 200g whipping cream
+ finish
2~3 peaches
▷ Tart base
1) Melt the butter in a bowl.
2) Mix it with sugar powder, yolk, and vanilla.
3) Sift the cake flour and mix it.
4) Agglomerate it when you don't see the powders.
5) Spread the paste on the baking sheet.
6) Let the side of the tart to stand up as well by hand.
7) Let it in a refrigerator for 2 hours.
▷Almond Cream
9) Melt the butter
10) Add sugar + egg and mix it well together.
11) Add sifted almond powder and keep mixing it.
12) Put the finished almond cream in a refrigerator as well.
14) On top of it, place beans, rice, or others.
15) Bake it for 13 minutes in 160°C heated oven and cool it.
16) Fill 70% of almond cream.
17) Bake it for 20~25 minutes in 170°C heated oven and cool it again.
18) Make diplomate cream while waiting for it to cool.
▷Diplomate Cream
19) Cut the vanilla bean in half and put everything inside the pot.
20) Heat the milk just enough for the steam to rise.
21) Mix the yolk and sugar in another bowl.
22) Mix it with cornstarch.
23) Mix it while pouring the boiled ingredients.
24) Pour the mixed ingredient in the pot again and boil it in medium~strong heat. Don't forget to stir it.
25) When the thick custard is made, cover it up with plastic wrap.
26) Cool it by putting in a refrigerator.
27) SIft the cooled custard.
28) Whip the whipping cream until it's hardened.
29) Put the whisk used for whipping cream in custard to whip the custard.
30) Add custard to the whipping cream and mix it evenly.
31) Place the creams on top of the tart.
32) Decorate it with the peaches.
33) You can decorate it with other fruits and herbs as well.
