🛒 Ingredients (4 medium servings):
🔸 150 g (5.3 oz) bittersweet dessert chocolate
🔹 4 L eggs
🔸 40 g sugar (3 tbsp)
🔹 45 g salted butter (2 ½ tbsp)
🔸 A pinch of salt
🍳 Directions:
1️⃣ Melt in a bain-marie the chocolate with the butter. Set aside and leave to cool.
2️⃣ Separate the egg whites from the egg yolks at room temperature.
3️⃣ Put the egg yolks in a large bowl and beat them for a couple of minutes with a hand whisk. Pour in the chocolate and mix well with the yolks.
4️⃣ In another bowl, add the egg whites with a pinch of salt. Beat them with the electric beaters. When they begin to make waves, add the sugar and continue beating until stiff.
5️⃣ Mix the egg whites with the chocolate mixture in batches and with wrapping motions.
6️⃣ Serve in glasses, cups, small glasses... Refrigerate at least 2 hours.
Notes:
✅ As it contains raw egg, it should be consumed the same day it is made.
✅ You may decorate with whipped cream or just with chocolate shavings.
