The ABC of Mousses
In this video you will learn the correct technique to make it spectacular and super important, bromatologically correct.
INGREDIENTS
✨ 1 yolk
✨ 2 eggs
✨ 100g sugar
✨ 330 ml heavy cream
✨ 200 g semisweet chocolate
✅ To make it white chocolate use:
▫️ 250g white chocolate
▫️ 500 ml heavy cream
✅ To make it with milk chocolate use:
▫️225g milk chocolate
▫️500 ml heavy cream
✅ To make this Mousse in the form of a cake add:
▫️ 7 g unflavored gelatin
▫️ 35 ml water to hydrate the flavorless jelly.
1. They are going to hydrate the gelatin with the water.
2. Activate it by taking it to the microwave or a bain-marie for about 15 seconds.
3. Add the gelatin to the mousse.
4. First pour a little mousse into the gelatin, mix very well and then add the rest of the mousse.
