Ingredients for chicken aspic:
- a 3-4 kg chicken, or chicken pieces (breast, drumsticks, thighs);
- 1.5 kg poultry feet;
- 4-5 medium onions;
- 2 large carrots;
- 2 large parsley/parsnip roots;
- 10 g whole peppercorns;
- 3-4 garlic cloves;
- 5-7 bay leaves;
- 1 medium/large celeriac root;
- 10-15 g salt, or to taste;
- 8 liters of cold water;
For garnish, keep some carrot slices, or different shapes, and a few sprigs of dill and parsley.
