Winter holidays are approaching, and according to tradition, you must not miss out on the cheese pies, or as they are also called, Moldovan Poale-n Brau with Sweet Cheese.
These wonderful pies are made with sweet, creamy cheese, in a special dough. The dough contains cottage cheese. Yes, you heard right, a suitable dough for these Poale-n Brau.

Ingredients:
- 600 gr flour (000);
- 50 gr sugar;
- 100-150 ml milk (added gradually to avoid the dough being too soft);
- 100 gr melted butter;
- 50 gr powdered milk;
- 1 level teaspoon of salt;
- 2 eggs;
Optional: 200 gr cottage cheese. It makes the dough more tender and flavorful.
Activating the yeast:
- 50 gr yeast;
- 50 ml warm milk;
- 1 teaspoon of sugar;
Let it sit for 10 minutes to activate.
For finishing, mix an egg yolk with a pinch of salt and 20 ml of milk, then brush the pies with the mixture before baking.
Ingredients for the filling of Moldovan Poale-n Brau:
- 800 gr sweet cottage cheese;
- 3 eggs;
- 1/2 teaspoon of salt;
- 4 tablespoons of semolina, or adjust according to the moisture of the mixture;
- 100 gr raisins;
- grated zest of one organic lemon;
- 100 gr sugar;
- 1 vial of vanilla extract, or 2-3 packets of vanilla sugar;
