This Smoked spatchcock (butterflied) chicken is awesome! Very easy to make and soooo good.

👩🍳 INGREDIENTS:
Whole Chicken
Equal mixture of Salt, Pepper and Garlic Powder (about 2 teas. each)
Olive Oil
Apple and Hickory wood chips/pellets
🥣 RECIPE:
1. Remove the spine and access fat from chicken
2. Flatten the chicken and tuck the wings (see video)
3. Dry off with paper towels
4. Rub Olive Oil all over the back of the chicken
5. Sprinkle a generous amount of the seasoning on chicken
6. Flip over and repeat 4 and 5.
🐔 SMOKING:
1. Preheat smoker to 220 to 225 degrees F.
2. Use 2/3 apple wood and 1/3 hickory chips/pellets.
3. Use a bowl or pan to catch the drippings as this juice really makes it delicious.
4. Place chicken(s) breast side up into smoker and cook for 2 hours.
5. Check temperature to reach 165 degrees.
6. When it reaches 165 degrees, remove, cut into pieces and pour juice over top.
Option: You can cook whole chickens uncut, it just takes a little longer to cook.
Option: Use seasoning you may prefer such as BBQ seasoning, but the salt, pepper, garlic seasoning is fantastic.
