Absolutely right Vanessa, I often think if tree could talk what lessons we would learn. Hundred if not thousand of years old and still growing, seen it all, done it all and need nothing but water from their twisted roots grabbing at the ground. Yet they can and do give us many things for little in return in serene silence. Again as you say boil or roast anything to be on the safe side as even the elderberry has a touch of cyanide in it if eaten raw, so picking bunches and munching on the walk isn't the thing to be doing. Really enjoy your forest knowledge as we all learn from one another and that sort of knowledge is endless.
If I heard you correctly I think you said "mast time". That's interesting because beech nuts are called mast in England for a long time, and were fed to pigs.
If only our old trees could talk!! Oh the stories they could tell us... I call them Grandmother, and protect the ones who live on my property.. I have Cedar and Madrone, Grandmother's here.. ... The Native American tribes harvested Acorns, [the nut of the Oak tree] and made a flour from it... It's a lot of work and a long process .. I was taught to soak the Acorns, in water for 3 days, and you must change the water twice a day, this removes the Tannic Acid .. [which causes the stomach upset]... then you dry them, and grind the nuts into a powder, or flour to bake with! .. They used the Tannic Acid with other ingredients, in their animal hide tanning process, it made the hides so soft!! ... Some people take quercetin, zinc, and NAC (n-acetyl-cysteine) for viral infections. Maybe for tick disease effects, too. Always check with your doctor first.

The pollen is the powdery stuff from the flower and so we just add ation to the word pollen to describe the action of plant reproduction by flower and bees or wind or other mechanical means ... I have eaten a lot of beech-nuts over the years and never suffered any bad effects. I guess I'm not sensitive to them. There are quite a few wild foods that can upset some people but not others, when uncooked. Something to watch out for. Good to point it out.
We have oak trees in uk, that are over 1000 years old. English oak. Others from 500 to more modern times also. Horse chessnuts have spike on the outer cover, we used to have conker fight with them as children. You cant eat these. Normal chessnuts can be eaten, thet sell them in old market gowns in bage heated on a fire. These can be eaten just peal off the covers.

What would you recommend for people who have fat indigestion issues? Eating stuff with high fat content seriously hurts me, so this wouldn't work for me.
