The speed gets memorized because if you want to go back to the same speed which you had set earlier before applying brake, you can press "RES" (On the '+' button) which stands for "Resume", so the car will accelerate on its own to go back to the memorized speed which was displayed on your instrument cluster. This is how it works on Honda's cruise control, I guess the same works here too. Pardon me if I'm wrong. Informative video with great explanation :)
