Did you know that the cinnamon in your spice cabinet is probably not true cinnamon, but an imposter known as Cassia? There are several related tree barks that are sold commercially as ‘Cinnamon’.
True Cinnamon
AKA: Baker’s cinnamon, Ceylon cinnamon, Soft stick cinnamon
Botanical Names: Cinnamomum zeylanicum, Cinnamomum verum
Plant Family: Laurel (Lauraceae)
Origin: Sri Lanka
- Almost exclusively from Sri Lanka
- The most complex flavour of all the ‘cinnamon’ species
- The bark of true cinnamon is relatively thin
- Hard to find for sale in most North American supermarkets
Cassia-Cinnamon
AKA: Bastard cinnamon
Botanical Names: Cinnamomum cassia, Cinnamomum loureirii (Saigon cinnamon)
Plant Family: Laurel (Lauraceae)
Origin: Central Asia
Regions Of Cultivation: China, Vietnam
- The most commonly harvested cinnamon species
- Cassia is sold in America generically as cinnamon
- The flavour is simplistic and more intense than that of true cinnamon
- Almost impossible to grind at home, so if you need ground, by the powder
When we want punch and potency, we reach for cassia; for complexity and subtlety - grab the true cinnamon.
Vietnam produces a cassia-cinnamon called Saigon cinnamon: Cinnamomum loureirii. It has a high oil content which gives a very intense flavour. It can be an overwhelming, more intense version of Cassia from other sources.
-Both are great in savoury as well as sweet recipes.
-Tomato based dishes are more tomato-ey if you add some Cinnamon
-BBQ rubs / sauces Chili
White Cinnamon
AKA: Canela (Spanish)
Botanical Name: Cinnamomum alba
Plant Family: Laurel (Lauraceae)
Origin: West Indies
This species is generally thought to be native to the West Indies, and was used culinarily by the indigenous peoples. The bark is thin, soft, and pliable like true cinnamon, with a white outer layer. The flavour is coarser than true cinnamon, with no complexity and a lower oil content than the Asian cassias. White cinnamon is not seen very often for sale outside the caribbean.

Verum = "true". They're both from the cinnamomum family. It's not that cassia is fake, it's just that someone gave it a name to light up the comments section centuries ago.

I use True Cinnamon almost everyday for my cooking and I can taste and feel the difference between Cassia and Cinnamon. Because I’m from Sri Lanka and living in the United States.

Hello Glen, I think you need to give people a basic idea about the health problems with too much cassia, after watching your video now i looked into the difference of their health effects and just discovered how bad is to use too much cassia, and this (too much) is actually a bit less than what we may use for flavouring some of the recipes, unlike the true cinnamon. Love you guys and you both making a big help for me to get through this CoVid19 times, thanks a lot and keep going friends. 🌺🌺

this is so true, I was shocked when I saw how much cassia is being use in US cooking when I just came to US, it is a ingredient in traditional Chinese medicine, and Chinese don't use it often for cooking, only a little bit for seasoning, certainly don't ground it up and put loads into the cake

I use true cinnamon aka Ceylon cinnamon because you reap the full benefits from Ceylon, no chemicals or pesticides are used whilst growing Ceylon & is much sweeter

I really like your explainations and realistic view. I agree that each cinnamon has its place. The only thing that concerns me is that for peope (like myself) who have a liver condition should be aware that eating too much of the cassia cinnamon can be harmful. For most people this is not an issue.

grew up on Mexican Canela (Ceylon Cinnamon) and powdered American cinnamon. differences are real to me. I like both and favor Mexican Canela for its nuance flavors.

Here in the UK I had never heard of cassia until today. I had put "Ground Cinnamon" on the shopping list and my partner bought "Ground Sweet Cinnamon". The ingredients say it's cassia. I came to this video to see if I can still use it. When we buy cinnamon sticks in the UK they're always the flakier true cinnamon, and I think that ground cinnamon usually is too. This cassia appears to have a different colour and smell to true cinnamon, but hopefully the flavour isn't too different.

Great explanation! I love putting a cinnamon stick (cassia) in my tea. I'll seen the flaky true cinnamon sticks at a local market and I'm thinking this would be a great way to taste the differences. Thank you

There are some really good Cantonese cassia cinnamon. Varies wildly in prices depending on the harvest age and parts on the tree. Cassia is not necessarily inferior, but it is hard to get them elsewhere.

Crisp explanation. One supermart attendant when asked for Cinnamon powder, handed me a Cassia and said, "This is what they use" God knows who 'they' are when if you ask for Cinnamon powder, you should get Cinnamon powder. It'd never get into the thickheads of people who simply live on what others do. A kind of stupidity but then not appreciating the difference between Cinnamon and Cassia and selling one for the other, must also be some form of stupidity!!

it used to not always be this way, I remember long ago when my mom bought Cinnamon sticks, they were papery and thin, when I learned about Ceylon Cinnamon being the 'true' Cinnamon, I decided to go take a look at the differences, doing that brought that memory up and I recognized Ceylon as being widely available, it was later on that cassia was dumped on US markets. (Good ole Chinese dumping foods on US markets, they did the same thing with garlic as well in the recent past)

Saigon cinnamon is my favorite! I pour loads into my oatmeal. I love the "smack in the face" of it. Other cinnamon just tastes bland in comparison.

I beg to differ. I think cassia is fine for many dishes, as you mention, where many other flavors are present, but it if it's used in any dish as a main flavor I find the difference entirely noticeable. If it's the *main* flavor, the difference is absolutely unmistakable - my wife agrees as well and she'd be the first to admit that subtleties like this are usually lost on her.

I have the good looking cinnamon sticks I just bought at the little Mexican market across the street yet it has no smell and tastes like a stick. I brought one to a boil a then simmered It very low for several hours yet the taste still was so subtle and the aroma in the air was light. I have a can of cinnamon sticks from the store that are totally opposite. The price of the real cinnamon is very high also. I’m discouraged. Is real cinnamon supposed to be better than this?

I like to use a stick Cassia in beef stock, but when seasoning the stew to taste I tweak it with ground Ceylon.

We’re Mexican and my mom gets all her cinnamon in Mexican markets and it’s always true cinnamon it’s the quills that have the papery layers that’s all she ever uses

There's a little carnicería a half a block away and I bought some Ceylon cinnamon there. I also have cassia and Saigon cinnamon. To my taste, Ceylon cinnamon is more subtle in flavor, Saigon cinnamon will kick your teeth in, and cassia is somewhere in the middle. They all have their uses.

I had a friend who as a former baker insisted that Saigon was the only variety he would use for his baking. Other types were too blah. Perhaps this is the kick in the face you describe.

From what I know, it's not banned per se, just restricted in terms of import and sale. Although cassia bark has several health benefits (blood sugar control, anti-fungal properties, flatulence and nausea prevention, among others), you are also right that it is actually pretty harmful. Cassia bark, marketed as cinnamon in many parts of the world, notably in North America and the UK, contains high levels of coumarin, a substance known to thin or dilute our blood, resulting in liver damage. While coumarin is present in the bark of almost every member of the laurel family, its concentration is highest among the varieties of cassia, especially Saigon/Vietnamese cinnamon (c. loureirii), Indonesian cinnamon (c. burmanii) and Chinese cinnamon (c. cassia). In contrast, the coumarin level in the bark of "true" or Ceylon cinnamon (c. verum) is much lower and therefore safer for human consumption, with the aforementioned health benefits for good measure. However, it's about 6 or 7 times more expensive than cassia as it's not as widely grown and its production is very labour-intensive (notice how the "quills" or sticks have a multilayered appearance; these are actually several layers of the thin, brittle bark rolled by hand). So far there are only two countries in which there's a large-scale cultivation of "true" or Ceylon cinnamon, i.e. Madagascar and its native Sri Lanka. Hope I've answered your question!

Can ground cinnamon powder be almost grey color instead of red? I bought some at a spice market, where they also had dried sticks that looked greenish, but I didn't pay much attention to them. It has a flavor despite the appearance.

Cassia is ok as long as you dont take so much that it can hurt your liver. Chinese medical studies find that Cassia works well for blood sugar, anti cancer, etc.

No health disaster at all - so many people are going to try and scare you that Cassia is 'dangerous', or will 'kill you', but 90% of the Cinnamon sold in the world for food is Cassia.

It should be called "Ceylon Cinnamon" or "True Cinnamon" - you can also tell because it's much thinner and will break apart in your fingers.

"True cinnamom" is more expensive than cassia. Because it includes a " stupid fee". The more stupid a user is, the more a user pays!

True Cinnamon is from India but it is called Ceylon cinnamon because the British grew and traded from there. There is account of true cinnamon exported from Malabar coast to Egypt several 1000 years ago
