In football we watched the hips to anticipate movement. I'm not a boxer so I'm no expert but it seems like he's reading the situation to anticipate the body movement. I didn't know that was possible.

So when shoulder starts moving you know to evade cause a punch is most likely coming. that's why they say Don't wind up on punches too cause your shoulder goes back then forward aka more reaction time for your opponent.
