Look forward to the Monday videos. I save them for a treat after completing chores. I loved the two sausage tips, first finishing in oven, and secondly letting them rest. I’ve been cooking sausage all my life (Austrian descent) and no one ever did this…but it makes a lot of sense to me. Thanks!😊

Great recipe for a dish. I call it the "kitchen of five transformations" - I open the fridge, see what's there and then I create a recipe in my head what to combine with what to make it tasty. Cooking with the heart is always a pleasure and often leads to new wonderful eating experiences. Today I'm having fried rice with egg and vegetables

I stopped doing keto under a few conditions. I stopped diary entirely to introduce carbs. (because it was cheaper). And I could drink wine even though it had residual sugars in it. I have recently stopped drinking alcohol and am considering letting go of meat too, I've never tried pure vegan but my first girlfriend was and she felt like a living plasticy silky goodness and I miss that. lmfao.

Expanding on the "tradition" tip: PICK YOUR BATTLES! Making food taste good is a difficult craft and a lot of very talented people have spent their entire life learning it. Making food taste good, but also low-fat, low-sodium, gluten-free, authentic/traditional, using only 1 pan and under 30 minutes is absolutely impossible and you will fail at all of these goals and end up giving up and ordering Deliveroo.

So well said, I couldn't agree more! Some goes for what you make yourself vs what you buy premade.

I may sound very much like an amateur saying this, but i don't get the stuff with resting the meat!? I really enjoy cooking, but most of the time i am cooking vegetarian dishes, so i'm not very experienced with meat. However i really like a good piece of meat every now and then and i want to get the best out of it. I See it all the time, especially for Steaks and stuff, but isn't the meat cold if i let it rest for 10 Minutes? The last thing i want is a cold piece of meat, even if it holds its juices better. Therefore i haven't tried it yet. Can you clarify?

While searing your steak, all juices are pushed in the middle of that meat, so if you cut it right after its done, all juices go out and you will end with a really sad and dry piece of leather. Let it rest at least for 5 minutes, on a preheated plate under a sheet of alu foil. Thank me later. PS: same with roasted chicken, turkey, whatever. Dont apply on braised or slow cooked meat.

Great question! It'll cool a bit, but shouldn't get cold. You can always rest it in a slightly warm oven. Larger pieces of meat like a roast or turkey can rest much longer without getting cold!

is it really -40?? also, 'fuck garnish' has been my personal mantra for decades. I only ever bother if it's requested or required by clients.

Did you cut bacon on your board, then cut fennel and eat it raw?!?
@KnifewearKnives

The board was washed, I just figured it didn't make the most thrilling content!

If the meat quality is good, there is nothing to worry about. Here in Germany there is a dish with chopped up raw pork meat on Bread called "Mettbrötchen" and everyone eats it and is fine 🤷

Whether he cleaned the board or not it’s fine. Obviously not if your cooking for people but honestly it’s not going to kill you are make u sick lol. Also there’s some smoked bacon you can eat “raw”
