White chocolate, while not containing any cocoa solids or chocolate liquor, is considered chocolate as it contains 100% cocoa butter as the fat. Candy melts taste like trash because they use another vegetable fat replacement, such as coconut oil or palm oil. This is usually done for two reasons. The obvious one - it's cheaper. Cacao farming is labor intensive because pods only ripen one at a time and must be cut from the tree by hand. Other vegetable fats are just way less expensive to produce. The other reason is tempering. Cocoa butter is the persnickety part of chocolate that requires tempering to ensure the cocoa butter crystals form the correct structure. That's how you know white chocolate is real chocolate, because it must be tempered. Candy melts are helpful for those new to chocolate work because they're much easier to manage without the challenge of learning how to temper correctly. The drawback of course is that cocoa butter is what lends white chocolate its signature taste, and without it candy melts just taste like waxy sugar. Blech! 🤢
Thanks for breaking that down. Also, vegetable fats are AWFUL for the body. Animal fats/cholesterol is incredibly necessary for proper hormonal production. Any kind of dessert which relies heavily on animal fat is far superior health AND taste wise, than any dessert with vegetable fats/oils. Coconut oils isn’t bad for a person, however, admittedly.

I don't like candy melts on their own right out of the package but my mom used to have a tradition of making suckers from melting them down. One of my favorite snacks in the winter time, as it was typically the Christmas molds like Santa clause and stuff like that. Haven't had them in years but the nostalgia makes me love them.

Aren't there some candy melts made of almond? That probably wouldn't actually be a bad flavor profile with the brownies. Although what is usually called almond bark is really sweet though.
White chocolate can't actually be marketed as real chocolate in the US bc it doesn't technically contain any coco powder from the cacao plant, white chocolate technically has to be marketed as chocolate flavored.

So is candy melts the same as modeling wafers? My mom does cake decorating and at times if she makes chocolate molds she uses modelling wafers and I think they taste different from most chocolate. They look like chocolate disks. I imagine this taste like chocolate.
I’m assuming you by candy melts, your referring to baker’s chocolate, which is made with vegetable oil instead of original cocoa oil which makes the chocolate set up harder without tempering. It does so at the sacrifice of taste.
Yes technically. However, it still contains the cocoa butter from the cocoa bean. The only reason it isn’t “chocolate” is because it doesn’t contain the cacao nibs. But it is made from the cocoa bean. So yes it’s chocolate. Sort of.
Legally speaking from food standards, it is chocolate because it's made from cacao beans. However there is white chocolate on the market that is not made from cocoa butter and is not considered real chocolate. It all comes down to the ingredients, which you should always look at when purchasing white chocolate because that drastically affects the tastes.
