Hey rob next time u cook duck, score the fat ( cut through JUST THE FAT not the meat ) season with salt and pepper . Pan on med- high heat, minimal oil, lay fat side down sear then flip and throw in a 350 degree oven for about 5 minutes. Pull duck out of pan to rest. While meat is resting use the same hot pan add balsamic vinegar wait for bubbles then add honey, stir and add butter to reduce. Serve with garlic mash potatoes and asparagus or broccoli. I promise it is so good. Would love to see a video on it!!!!!

spectacular videos!!!! im in north carolina. 40 years now of waterfowl hunting. living room looks like a museum. variety of ducks mounted and geese and 1 tundra swan mounted. i would have to say it looks like florida has more ducks than NC though.

Robert, I shot my first duck not far from where you're at in this video as a kid in the 60's with my Dad.... During duck season, just about every weekend we were all over that flyway and have killed ducks and geese in the thousands out of that rich area...... Since then I've been around the world 5 times and had some hunts that were truly amazing. But I never hunted a place that had so many birds as the Calousa Marshes of the Sacramento valley where you're at right now. Thanks for the trip down memory lane, And you can't beat a Speck for an eating bird..... And I've shot my share of Honkers out here in Rhode island, but I ain't seen a Speck since 83....
