One thing he didn't mention about Gumshara is that the chef comes in on his day off to check the broth. Good broth can be a 1 week process. Also check out Ryo's in North Sydney. It's been around a very long time and hasn't been toppled by the newer restaurants. Even Gumshara is considered new compared to Ryo's

Gumshara is Sydney’s OG alongside Ryos. Would have been cool to see you try Ryos too. But Sydney’s ramen game is banger To give some context, about a year ago Gumshara moved location and when they closed their OG store they had 30-60 min lines for a month because everyone knew it was closing.

This is what Australia is. We might not have "Australian cuisine" but this country was FOUNDED by immigrants. So thats our culture. I am a proud Italian / Uruguayan. Australia wouldn't be ANYTHING without the immigrants, Asians, Italians, Greek, Spanish, Lebanese. etc

Also context about Hanasuki. It is a sister shop to one of Sydney’s best Yakiniku spots called Choji, also in Chatswood. They serve a5 wagyu. They also do Omakase and what I prefer, niku omakase - which is a wagyu omakase rather than seafood. Worth a try if you can get in.

⁠​⁠@@freetoplayaccount3487Back when i went to cullinary school, i was blown away by the effect acid has on different dishes.. Salty and fatty is pretty one dimensional, but adding that little splash of acid just lifts most dishes to new heights.

Hi Mikey, So happy that you are doing some amazing Japanese cuisine. Just an FYI, Not maz soba but ma ZEH so ba. The G in Genmaicha is a hard G. Not ahn-sen egg, but OHN sen egg. Not ton kah tsu, but ton KOH tsu.

The Pork Broth Ramen with the extra Pork Belly and Rib looked so very good!! Then he dumped the chili sauce into it!! Too spicy that way for me but I would love a little of the heat!! That is maybe my favorite in the video!! 🌿

When I was a teenager, I started adding vinegar to my instant ramen at home, along with some Dijonaise mustard, parmesan, walnuts, and diced tomatoes. My family thought I was crazy, but it was teenager food, yk? I ate what I liked. To this day, the flavor of that garbage ramen I made as a midnight snack still hits me right in the nostalgic comfort food feels. 😄

Gumshara, a true Syd ramen institution.... just by looking at it i feel full already.... i can only handle once every few years Also you should try the laksa next to where you had your fish sandwich... Malay Chinese noodle bar

MIKEY I am far from eating noodle soups, Ramen. I like noodles so will have to try Ramen noodle shops here in America. I especially liked the osyter noodle soup because with the creamery broth with butter. Looks inviting. Mikey thank you for this tour of Ramen noodle soups. I ❤️ love the creamy soups. ❤🎉😊

In Sydney what we call a 'shallot' is 'scallions' to the Americans and 'spring onions' to the rest of the world and outside of Sydney as well

His Chinese heritage is instilled in him so he almost never eats local. He's got that Chinese 'I gotta eat noodles/rice or else I'm gonna die' instinct in his head. That's probably due to being coddled as the only male child of Chinese parents. They tend to cook for him and bathe him until the male child is 16 or so. You see it everytime he comes home to NYC, his parents cook up a big meal for him. Buy yeah, he never tries local cuisine. 'Mikey, when in Rome, eat like the locals. And we don't have noodles/ramen here!' lol

You cannot compare a country like Italy mostly Italian to Australia with every nationality of person and cuisine and we all grew up here with corner Chinese and now Thai and then the rest Australia is not Europe and I immigrated from Europe

There's a pretty big population of chinese people here. The chinese food here is good. Same with Italian and other cuisines.

Australia is very multicultural and you will find Chinese, Korean, jap, Thai and viet food in nearly every neighbourhood. If it’s modern aus food it will just be steak and fish 😁
