1898 Shrimps a la Newburg Recipe - Old Cookbook Show - Glen And Friends Cooking
This is a riff on a Lobster a la Newburg recipe found in the 1898 cookbook called 'The Twentieth Century Cook Book'. Lobster a la Newburg pops up in written books around the same time as Lobster Thermador recipes; and when you compare the two they start to become very muddled in terms of ingredients and methods. People will argue endlessly about which is which, and how to make them, but in practical terms they overlap so much it's hard to tell sometimes which is which.
Lobster a la Newburg Recipe:
Boil 1 large lobster; when done pick meat from shells, cut in 1 inch pieces, and season with salt and a pinch of cayenne pepper. Add butter the size of an egg. Let all simmer 5 minutes, then add 1 glass Madiera or sherry wine, with 1 teaspoonful sugar in it, and let boil 3 minutes. Beat the yolks of 3 eggs with 1 cupful sweet cream, add to mixture and boil 5 minutes longer. Serve very hot, in shells or chafing dish.

Prepare as above.

Having passed 50, there's another type of joke in there somewhere; and eventually you get to a lemon, which come to think of it, is itself often paired with shrimp.

For what it's worth, Glen used Cream Sherry here which is one of the sweetest possible sherries out there. You could use Amontillado Sherry which would have the same flavour but a fraction of the sugar (and then add a touch of sugar to taste). Or.. use Cream Sherry and no added sugar.

I think these recipes appear around the same time because that is the era when chefs were looking for ways to "up-sell" lobsters and shrimps from "trash fish" to something that would appeal to their newly wealthy clientele.

I might have expected dry sherry (that looked to be cream sherry) a better fir for lobster and shrimp and eggs (a la Chinese cuisine). I also could not see whether it "set up"/scrambled or remained in a thickened cream-sauce state. I have to say, your "old cookbook" series has me craving . . . . collecting a few more old cookbooks. (Physical, I know there are numerous digitally scanned online.) Thanks for these restful Sunday Morning videos!

Glen: Please explain how you "took away" about half of the sherry after you'd put sugar into the almost full glass of sherry. Was it saved to be used in another batch of Shrimp a la Newburg or in another recepie? Respectfully, WS

I remember loving lobster Newberg in the 1960's when I was in my teens - it was popular in the seafood restaurants on the east coast. It was generally served with rice. As I recall, lobster thermidor (sp?) was served cold, not hot? I ordered it once, and was surprised by that. There were all sorts of sauced dishes I remember that you can't find any more.

Lobster Thermidor is my favourite lobster dish. This looks interesting. Maybe also add some cheese on top and brown it in the oven like Lobster Thermidor?

Thank you for sharing! It reminded me of cooking oxtail soup. Or whatver oxtail. To add the sherry or leave it out. This immense difference in the result. I'm just about to fry green asparagus in garlic, chilli and honey. No water. No oil. Just honey.

Man how I miss the cookbooks to be like this, just title and recipe. These days you need to read through a life story and how it thought of it while walking down the beach. Just give me the cooking instructions!

My biggest concern would be essentially cooking the shrimp twice. The first cooking for 5 minutes should be sufficient in fully cooking it. The secondary requirement to bring the dish to a boil to me looks like it would overcook the shrimp causing it to toughen.

I notice the page of lauding mentions that where there are elaborate recipes, there is a simpler one to match. Perhaps it would be interesting to find one of these pairs and make both versions and compare the results.

Love the channel Glen. Question on shrimp. Do you consciously view the source of where the shrimp you purchase originate? I hear terrible things about the feed used to grow shrimp in Asia. I love shrimp but have been avoiding them for years because of this. Thanks.

Good day Glen, Hi Jules 👋 I was impressed by the color of your egg yolks. Then Jules mentioned the yellow color at the end 😄. Do you have free range farmers market or are they from the grocery store? The store eggs in the States don't have very much color because the feed the chickens get isn't the greatest.

Interesting 😊 I’ve just looked up Lobster Newburg in L Saulnier’s “Le Repertoire de la Cuisine” ( on my iPad so accents not easily available) It gives 2 receipts for Lobster Newburg, one using raw lobster, and one using cooked lobster ( cut up live Lobster!!) I seem to remember having to cook Lobster Thermidor at college and we used a trussing needle to “pop the lobsters off” before we cut them in half and removed the meat. Not a pleasant experience, and while I like Lobster I usually only buy ready dressed Lobster these days and have a salad with it. I did once make Lobster Thermidor using pre cooked lobster and it had the texture of a pencil eraser when it was served up.

Glen, you should hunt down "The Chicago Daily News Cook Book," 1930. Entirely composed of reader submitted recipes, great for seeing how people actually cooked then.(Sorry, I am not parting with my copy.) I was fascinated by the recipes for "veal birds." Cooking veal like chicken, because chicken was so much more expensive then.

I would alter this recipe in two parts. Taking out prawns one they are cooked so they don’t overcook. And also beet eggs with a little bit of the cream. Add most of the cream to reduce then turn off the heat and add the remaining cream and eggs. The wouldn’t curdle as much.

A solution to the sweetness would be to use a good dry sherry. I would like it over rice or with some form of pasta. I make Fettucine, so that would be the choice at our house.

Fortified wines produced in Spain. Tend to be sweet, with mellow flavors, making them nice for cooking

Fortified wines have extra alcohol, like brandy, added. Adds to flavor and takes longer to turn to vinegar. Madeira especially was very popular during American Colonial times because it traveled well by ship. Unlike wine, you didn't have to wait 6-12 months for the sediment to settle again.

The recipe boils those poor shrimp forever. Nowadays, we'd probably add the butter and shrimp near the end, to not cook the shrimp to death. Not so rubbery then.

It's a cup, a standard Commonwealth cup of 250 mL, all the markings are on the side. (as opposed to a US cup of 240 mL)
