Packed with nutrients and surprises with every forkful! The sweet mango with the spicy cilantro with the cooling feta . . . and that's just one blend. The next forkful catches a bright radish with a subtle avocado and a refreshing cucumber all drenched in tangy lime juice. What a brilliant combination of flavors and textures! Our family reunion happens in August every year. A few of us enjoy competing for the most popular or most original dish. Last year's winner for most original was my Auntie's Creamsicle Pie. My brother-in-law won the most popular prize for his Jerk Chicken. He'll probably win most popular this year too if he brings that again. But I'm betting on me for the most original! This salad has got to be one of the most original combination of flavors, textures, AND colors that I've seen in a long time. I'm going to present it in a huge punch bowl (I'll probably quadruple the recipe -- we're a BIG family) surrounded by smaller (but still large) bowls of various add-ons according to individual tastes: arugula, mixed herbs, shredded Chinese Cabbage, shredded carrots, and good old iceberg lettuce. First I was like, "mango?!" Then I was like, "jalapeno?!" Then I was like, "feta!" I will have to make this one. Except I can do spicy, so I'll take out the jalapeno seeds.
